I have a strange little habit (compulsion) of *having* to switch empty sockets off (even if I'm in a public place, much to the embarassment of my company). So, I'm just wondering if I can justify my oddness by also satisfying the knowledge that I may be helping to save the environment?

If it does save energy/electricity, does anyone know the quantative data?

In order for energy to be consumed there has to be a flow of electrons and some device in use to consume the energy. Having a light switch on to a socket that has not bulb (or one that is burned out) will not consume energy. This is due to the fact that there is nowhere for the energy to go to in order to be consumed.

The ONLY exception to this is where there is a dimmer switch as there could be come energy consumed in the reostat device. However, this energy would be almost complete immeasurable.

Hope this helps.

If you mean that a device is plunged in but is not on, then yes. There is energy consumption. very tiny, but it is still there.
Most of the electrical devices working from 110/220 V don't use that much voltage and current (For example, computers actually operate on 12V out of 110V, rest is "filtered out", but that's when the machine is on). When the device is off, current is circulating through the coils of a capacitor (getting the power supply quite warm).
Temperature change leads to greater AC consumption.
