"Garlic Shrimp"
1/4 cup olive oil
4 large cloves garlic; finely minced
1 tsp. red pepper flakes
1 lb. medium shrimp (prawns); peeled and deveined
2 tbsp. fresh lemon juice
2 tbsp. dry sherry
1 tbsp. paprika
Salt and freshly ground black pepper
Chopped fresh flat-leaf (Italian) parsley for garnish
In saute pan over medium heat, warm the olive oil. Add garlic and pepper flakes; saute 1 minute. Raise heat to high and add shrimp, lemon juice, sherry and paprika. Stir well, then saute, stirring briskly, until the shrimp turn pink and curl slightly, about 3 minutes. Season to taste with salt and pepper; sprinkle with parsley. Serve hot.
"Garlic Lover's Pasta" - 4 servings
2 tbsp. olive oil
5 garlic cloves; crushed
1 tsp. dried basil
1/4 tsp. salt
1/4 tsp. black pepper
1/8 tsp. crushed red pepper
1 (28 oz.) can Italian-style tomatoes; undrained and coarsely chopped
4 cups hot cooked linguini (about 8 oz. uncooked)
1/4 cup (1 oz.) grated fresh Parmesan cheese
Heat oil in large nonstick skillet over medium heat. Add garlic; saute 1 minute. Add basil, salt, peppers and tomatoes; bring to a boil. Reduce heat; simmer 10 minutes or until mixture starts to thicken. Serve over pasta; top with cheese.
"Roasted Garlic"
Cut the top off a head of garlic. Place the head on a square of foil, drizzle it olive oil and wrap. Roast in a 400* oven 45 minutes. Squeeze garlic from skin.
Bread Spread: Mash with olive oil, grated Parmesan cheese, salt and pepper.
Mashed Potatoes: Whisk in a little chicken broth; use in place of cream or milk.
Sauce for Chicken: Saute chicken breasts in skillet, then mash garlic in pan. Stir in broth, rosemary, salt and pepper. Boil to reduce to a syrup; pour over chicken.

There's actually a dish called Garlic Soup, believe it or not.
Gilroy, CA, has the annual Gilroy Garlic Festival. You could try googling for that, I bet that site has tons, there's even garlic ice cream! Or try looking for Christopher Ranch online.
Garlic's also a big star in garlic mashed potatoes with cream cheese, and also hummus. Just use lots. Whatever the recipe calls for, I usually double it. I love garlic!

Roasted garlic. Cut off the very top of a whole bulb...the side opposite the root part. Rub it with some oil, olive is good and put it in the oven. I usually bake it at about 350 for about 25 minutes. You can even do it with other things in the oven baking. When it is soft when you push on the sides, bring it out and squeeze out the garlic. You can put it on everything. I like it on sourdough bread with warm brie cheese. But it's good on chicken and toast and noodles. It gets really soft and buttery almost and it sweetens up the flavor.

Roast some tomatoes and garlic at the same time. Add to pasta with olive oil, fresh grated Parmegiano-Regiano, torn basil leaves, & fresh-grated black pepper. Add sauteed shrimp. For a more garlicky flavor, rub a clove of cut garlic in the pasta serving bowl before adding the hot pasta.
Roast a bunch of garlic at the same time; and keep it in a jar in the fridge to smear on baguettes, add to soup/stews, or mashed potatoes.
When I make a roast, I cut little slits throughout the meat and insert cut garlic cloves.

Ingredients
2 cups whole milk
1 cup heavy cream
5 cloves garlic, peeled and minced
6 egg yolks
1 tablespoon honey
Pinch of salt
Pinch of white pepper
Equipment
Ice cream machine
Preparation
In a saucepan, gently heat the milk, cream and garlic just until steaming and small bubbles form around the edges of the pan. Remove from the heat, cover, and let infuse for 20 minutes.
Place a medium-sized bowl inside of a larger bowl filled with ice water. Set aside.
Half-fill a clean saucepan with water and heat over medium heat until just simmering. In a separate large bowl, whisk together the egg yolks and honey until smooth and pale yellow. Reheat the cream mixture just until it begins to steam, not letting it boil, and in a slow and steady stream, add it into the yolks, whisking briskly as you pour.
[Chef’s Note: This step is called tempering the eggs. Slowly bring the eggs up to temperature by adding a little hot liquid at a time so as not to shock, and cook them by adding the hot liquid all at once.]
Stir the mixture together thoroughly and then place the bowl over the saucepan of simmering water. Stir slowly but constantly until the mixture thickens enough to coat the back of a spoon, but do not bring to a boil or it will most likely curdle. Using a fine mesh sieve, strain the ice cream base into the medium bowl that is set in the larger bowl of ice water. Let cool completely and then freeze the custard in an ice-cream machine according to the manufacturer’s instructions.
Service
Serve as an accoutrement atop mashed potatoes or a piece of meat for a creamy contrast and surprising zing to any meal.

TRY THIS RECIPE called---->egg ala pobre
-boil 5-6 chicken egg or 2 dozen quail egg
-minced garlic (plenty of them)
-unsalted butter (half a cup)
procedure:
1.saute garlic w/ unsalted butter in a very low fire. make sure not to burn the garlic or else the butter will taste bitter.
2.when the garlic is slightly golden brown (not burn), add the hard boiled egg then stir it until the egg is covered w/ butter. let it simmer for 2-3mins.
3. add a pinch of salt & pepper to taste.
** you may serve it as an appetizer or as a meal, just add steamed rice in a bowl then topped it with the dish.

BROCCOLI AND CALLOWER IN GARLIC
finely chop about six cloves of garlic set aside.
place about six cut up florets of each veggie in boiling water for five minutes then drain.
preheat oven to 350f
place oil and garlic in large bowl add veggies and mix to coat
place in a casserole dish and bake about 25 to 30 Min's
stirring once or twice
the last five minutes sprinkle some grated cheese and turn the broiler on
broil till cheese is melted
then enjoy

garlic mashed potatoes
2-1/2 lb. potatoes, peeled, quartered
4 cloves garlic, minced
1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread
1 Tbsp. butter or margarine
1 tsp. salt
COOK potatoes and garlic in boiling water in large covered saucepan 20 min. or until potatoes are tender; drain.
BEAT with electric mixer on medium speed until smooth.
ADD remaining ingredients; beat until well blended.
garlic fries
i take a bag of fries, thawed, 1 cup of garlic in a seperate bag. take fries place in ggarlic and shake until coated, fry in corn oil and enjoy, really garlicky and tasty.
garlic grilled flank steak
3 cloves garlic, crushed
1 tsp. each: paprika, salt and pepper
1 beef flank steak (1-1/2 lb.)
3/4 cup BULL'S-EYE Steakhouse Barbecue Sauce with A.1.
PREHEAT grill to medium-high heat. Mix garlic and seasonings; rub evenly onto both sides of steak.
GRILL steak 5 min. on each side. Continue to grill 10 min. or to medium doneness (160°F), turning and brushing occasionally with the barbecue sauce.
CUT steak across the grain into thin slices

There are many to choose from. I like garlic too and here is
something you can do to enhance all your sandwiches from now
on, Toast your bread and then with a clove of garlic rub it on the inside of the sandwich bread, the bread will act like sandpaper and leave a film of garlic on bread to enhance your sandwich.
