You can get her a string of pearls for her to wear on her wedding day, but most women already have their jewelry picked out. I think the most heartfelt gift I have ever seen was a bunch of roses/flowers and a beautiful poem the groom had written for her. He had it delivered to the place the bride was getting ready and she had no clue it was coming! She was estatic

She will be nervous and jittery on the day of the wedding, most likely. Write or find a nice poem, hand write (or print on the computer if your writing isn't nice enough), glue it onto construction paper, and cut it up into a puzzle. Since you're not supposed to see her before you're at the altar, enlist her maid of honor to help you out. She'll most likely be with your fiancee for most of the day. Every so often, have her give your fiancee a piece of the puzzle, or have different people do it throughout the day. If you have one piece for each person in the wedding party, or each woman in the wedding party, or each of her family members would be great. Es specially if her parents give her a piece, it'll mean a lot to her that you use her parents to deliver it.
If that seems too complicated or time consuming, just cut up the poem or a letter horizontally, number the lines so she can put them in order, and repeat as above. (Now that I think of it, if the maid of honor has all the pieces, I'm sure your bride will be able to talk her into giving them all up too early.)
The idea is that she'll be reminded through out the day that you're thinking about her, that you're waiting for her at the end of her long walk, that you love her and can't wait to be married to her. (The poem or letter should be something to that effect as well.) She should get the final part of it just before she leaves the bride's room to walk down the aisle.
Maybe slightly less messy and more of a long-lasting keepsake would be to have it engraved into metal (like the nameplates that get added to trophies or suitcases), or written over watermarked pictures of the two of you, so that afterward it can be framed...
That's my most creative wedding idea yet so I hope you like it. =) (A friend of mine did a puzzle piece letter for his gf on her birthday and sent her a piece in the mail each day, which is where I got the idea from. She loved it!)

My son sent his bride the morning of the wedding a dozen of Roses, with a beautiful note. For something more personnel what about the necklace that has 3 diamonds in a straight setting they come in all price ranges. The 3 diamonds symbolize the Past , Present & Future. She is all those things to you.. Good Luck...

A scrapbook of course- photos, movie/concert ticket stubs, menu from the first place you took her out to eat/ engagement announcement from the paper- all the memories and events that led up to your special day. Of course, the last page will be your wedding day, with a space left to put your wedding photo.

It all depends on what she likes. You could do a compilation basket of some of her favorite things. (ie: favorite book, favorite bath novelties, favorite perfume, favorite flower, favorite candy) and have it sent to where she is getting ready via a friend or family member of hers. Make sure you include a personal note or poem that she can cherish forever.
