BREAD PUDDING

1 cup bread
2 cups milk
2 eggs
2 Tablespoons sugar
1/4 cup sugar
grated lemon rind
lemon flavoring

Remove crusts from bread. Pour milk over soft bread. Allow to stand until soft, about 30 minutes.
Separate eggs.

Add egg yolks, slightly beaten, 2 Tablespoons sugar, and grated rind of 1 lemon.

Pour into buttered baking dish and set in pan of water to bake until it sets.

Beat egg whites until stiff, gradually adding scant 1/4 cup sugar while beating, and a dash of lemon extract, lemoncello, or lemon juice (whatever you have). Spread the egg white mixture out on top of the pudding while still warm, then return to oven until slightly golden brown.

Cool, and just before serving add a spoon of tart jelly in the center of the meringue of each serving.


THE BEST BREAD PUDDING

7 or 8 slices of white bread--into 3/4" pieces
3 cups hot milk
2 beaten eggs
2/3 cup sugar
1/4 tsp salt
1 tbs butter
1 1/2 tbs vanilla extract
1/2 tsp cinnamon
1/2 tsp nutmeg [+ sprinkle over top when in pan]
1/4 tsp baking powder

Coat 8" X 12" casserole dish with butter. Pull bread into 3/4 " pieces & put aside. Combine remaining ingredients and mix well. Add the bread and mix well.
Add to casserole dish and sprinkle with nutmeg.

Bake in 350°F oven for 45 minutes.

"Bread Pudding" - 8 servings

3 eggs
3 cups milk
1/2 cup sugar
1 tbsp. vanilla extract
1/4 tsp. salt
4 cups soft white bread cubes
1/2 cup raisins or chopped, pitted dates
Whisky Sauce (recipe follows)

1) Preheat oven to 375*. Butter 1 1/2-quart casserole. In large bowl with wire whisk, beat eggs until frothy. Beat in milk, sugar, vanilla and salt until combined. Stir in bread cubes and raisins; let stand 5 minutes. Stir again; pour mixture into prepared casserole.2) Set casserole in baking pan; place on oven rack. Add boiling water to baking pan to reach halfway up side of casserole. Bake 1 1/2 hours or until knife inserted near center comes out clean. Serve warm with Whiskey Sauce.
(TIP: Soft bread makes a creamier pudding; firm-textured bread yields a firmer puddings.)
WHISKEY SAUCE
1/2 cup butter or margarine
1 cup packed brown sugar
1/3 cup bourbon
1/4 tsp. ground nutmeg

In 1-quart saucepan over medium-high heat, heat all ingredients to boiling. Serve warm over Bread Pudding. Yields 1 cup.

Simple Bread Pudding

A loaf of stale bakery bread, torn or cut into 1-inch bread cubes
3 cups milk, half-n-half, or a combination of both
1/2 stick butter (4 Tbsp.)
1-1/2 tsp. ground cinnamon
1/2 c. sugar
2 tsp. vanilla
3 eggs
Extra sugar and cinnamon for sprinkling on top

Preheat the oven to 350-degrees and butter an 8-inch square baking pan. Toss the milk, butter, cinnamon and sugar into a saucepan, and heat gently over medium heat until the butter has melted. Remove from heat and stir in vanilla.

Place bread in a large bowl. Pour the milk mixture over the bread, making sure to cover all the bread. Weigh the bread down by placing a plate or pan on top of the mixture, held down with a few cans from the cupboard. Let sit for about five minutes, making sure the bread gets good and soaked.

Beat the eggs and pour on top of the bread mixture; stir to thoroughly combine. Pour mixture into 8-inch pan and sprinkle with sugar and cinnamon.

Place the pan into a larger baking dish and place in the oven. Add enough hot water to the larger dish until the water reaches about an inch from the top.

Bake for 45-70 minutes. The pudding will be puffy and golden when it's done; when a knife stuck into the center comes out fairly clean, the pudding is done.

Enjoy it warm (with vanilla ice cream) or cold. Bread pudding keeps well for a couple of days; just cover and store in the fridge.




Bread Pudding
10 slices bread

nutmeg (optional)

1. Heat oven up to 350°F.
2. Cut slices of bread into cubes.
3. In a saucepan, heat the milk, and butter but do not allow to boil.
4. To this, add the vanilla, beaten eggs and sugar, when a bit cooled.
5. Add the baking powder and blend until smooth.
6. In an ovenproof tray, layer the cubes of bread and pour over it the liquid prepared above, until the bread is saturated.
7. If desired, sprinkle your choice of nutmeg, cinnamon or raisins.
8. Bake for approximately 30 minutes or until it browns.

OR

Caramel Bread Pudding
6 slices bread, day-old, cut into 1/2 inch cubes
1 cup water, hot
1 cup brown sugar
4 eggs, lightly beaten
2 cups milk, warm
1/2 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon, ground
1/8 teaspoon salt
6 servings

1. Place bread in greased 2-qt. baking dish.
2. Combine water and brown sugar; pour over bread.
3. Combine remaining ingredients; pour over bread.
4. Bake at 350 degrees F for 50-60 minutes or until knife inserted in center comes out clean.
5. Serve warm or cold

Hi Sam,

This ones really cool!
----------------------------------------------
Bread & butter pudding muffins...
----------------------------------------------

*Take Bread slices
>cut off some of crust
>roll out, or press flat (1/2cm not too firm)
>butter the bread
>cut a slit in each (just to the centre of the slice)
>then press into muffin trays butter side down
(leave little tips of the corners sticking out if you want
looks nice when served)


*Make up the egg custard
>mix one egg per one cup of milk
(then add one more egg to be sure)

Add >cinnamon/sugar/ vanilla essence
(I like to use a vanilla pod paste, but anyway...)

*Pour into the bread lined muffin tray.
*Sprinkle wih sugar and cinnamon / nutmeg

*Bake about 180 degrees celsius
*Put tray in a dish of water with a few centimetres on boiling water in it... (they cook more evenly)

Serve with whipped cream of course for these,,,
upside down or right way up both look nice...
Add some sauteed berries on the side etc....

AND FOR THE PLAIN OLD ONE

Mum always said one egg per one cup of milk...

(I do about .....

5cups milk &
6 eggs, (one more for good measure. )
I add sugar to taste... Whisk..
Cinnamon / Vanilla etc.
Put in baking dish
Butter your bread, cut into triangles or whatever,,,
Lay on top butter side up on your egg custard...

Sprinkle with Nutmeg and / or cinnamon
Bake also laid in a dish of hot water.
About 190 degrees...

Just ***** to check when done
(doesn't need to be too stiff though),
about 40 minutes I think...

and dont forget...
... ADD SOME SULTANAS! IF YOU LIKE ... NICE!
dont over do it with them though...
