For roasting only:
* Spread out in a single layer on a baking sheet. Toast in a 350° oven, stirring occasionally, for 10-15 minutes. OR...
* Toast in an ungreased skillet over medium heat, stir until golden brown and aromatic.
* Be sure to not overcook. Pecans continue to brown after removing from heat.

These are wonderful as a snack, part of a holiday basket, added to salads, as a topping to pumpkin pie or sweet potato casserole. They do get pretty sticky if exposed to moisture, my daughter loves them and calls them "sticky nuts." They are HIGHLY addictive, make a lot!
2 cups pecan halves, shelled
1/4 cup honey
Heat oven to 350 degrees. Place pecans in an even layer on baking sheet. Roast 12 to 15 minutes. Remove from baking sheet and place in large bowl.
In saucepan combine honey and pecans. Cook over medium high heat, stirring until mixture simmers and foams (about 4-6 min).
Transfer to a baking sheet (lined with wax paper for easy clean up) and separate with fork. Cool completely. Store in air tight container.

Add pecans and butter. Cook to soft ball stage. Beat until creamy. Drop by teaspoonfuls on waxed paper.

Coat the pecans with whatever ingredients you desire - spray a sheetpan (cookie sheet) with quick release spray (spam et al) roast the kernals at aprox 350 F for 10 minutes - checking every so often to make sure they aren't burning since the different size kernels will not roast all at the same time. Either sweet or savory works the same way.

PECAN ROAST
10 or 12 lb. roast
Salt
Red pepper
3 skewers
Cotton string
Chopped onions
Pecan pieces
1 1/2 c. coke
Cut a long deep cut in side of roast. Salt and red pepper inside of roast. Stuff with pecans. Use 3 skewers and cotton string to tie up roast. Salt and pepper outside of roast. Place roast in roasting pan. Pour coke around roast (NOT ON TOP). Bake in oven at 350 degrees for 2 hours.
OR
ROASTED PARTY PECANS
Toss 1 cup unsalted pecan halves in 1 tablespoon oil mixed with 1 tablespoon Worcestershire sauce. Roast in shallow baking pan in slow oven 275 degrees for 30 minutes, stirring often. Drain on paper towel; sprinkle with salt.
OR
ROASTED PECAN CANDY
Roast 2 cups pecans at 350 degrees for approximately 12 minutes or until very slightly toasted.
Mix together: 1/4 c. brown sugar 1/3 c. Pet milk 1/2 tsp. cinnamon Dash of salt 1 tbsp. white Karo
Cook to soft ball stage (to test, drop few drops in cup of cool water until it forms a soft ball that can be picked up.) After reaching soft ball stage, remove from heat and add: 1 tsp. vanilla
Mix in roasted pecans and spread on wax paper. When cool break apart.

i like to add a bit of spice- cayenne pepper - touch of salt and some brown sugar.shove in a hot oven till they toast up - about 5 mins should do it - or in a dry pan same ingredients- don't go too crazy on the spices
