You should know that the members of the church do favor other church members by patronage of business jobs, etc. As is natural and good, everyone should support their fellow church members ahead of other people. There are many non-Mormons in Salt Lake also. Why not rent a place there by the month and try it for a while ? If you find you don't want to stay, it would be easy to move again My neighbors, Mormons, are retired teachers and very nice people. I think you will like living there quite a lot..

Find some Native Americans... i think there may be some Navajo. Get friendly with them. I know some in New Mexico up around Four Corners.
