Giving apples to humans and (quite clearly) lamb to lions...

Well since the Gan Eden was a Paradise very much like Heaven on earth, I conjecture that by researching Scripture descibing Heaven that the lion and other animals that are meat eaters now ate grasses and fruits. I speculate that after Adam and Eve fell and G-d killed animals, putting their bloody skins on the man and woman that carnivores got their taste for flesh. (see Gen 3:21) Isaiah 11:7 says this about Heaven : "The cattle will graze among bears. Cubs and calves will lie down together. And lions will eat grass as the livestock do."

Most literalist Christians and creation scientists will say that the lions of Eden were vegetarians.
A more theological point of view begins with the notion that the Garden of Eden was a sinless state of existence more than an actual place. A sinless state of existence is also one without any desires and needs. Creatures in the Garden (this sinless state before the rest of Creation was in place) were without want. They simply didn't need food or drink, and they were neither lusty nor vengeful. The worst thing that they had going on, apparently, was curiosity.
If you go for that kind of thing, that is.

I thought, because I don't remember/know where, I heard that in Eden the animals were at peace, and ate grass. Then after Adam/Eve messed up, GOD made everything as we see it today.
Part of me thinks this is not logical, and that GOD made the animals as they are today. Food chain and all that comes with it. This would be more in keeping with GOD using the rules he/she set in place and building off them as time moved along.
(Yes I'm going to say it) GOD set evolution into order and let the animals/plants go on automatic. Humans were a different project, and I haven't thought about us to form a complete thought.

At that time, God said that He had given every green herb for meat, so because the Lion and other animals were not savage Beast at that time, (until after sin came in), then I would think the lion was satisfied eating green herbs as its` meat, even as some large creatures do today, and grow to be huge, and strong, such as Elephants, Horses, Cows, Wilderbeast, rhinocerous etc.

All were vegetarian in Eden. There was no death. After the flood God said it was OK to eat meat.

Eden Is a mythical ancient memory of the appearance of the first intelligent humans in Africa, the myth describes how the highly intelligent homo Sapience evolved from the less intelligent homo erectus. lions at that time ate meat, including human meat.

The lions were vegetarians and eventually will be again..
Isa 11:6 The wolf also shall dwell with the lamb, and the leopard shall lie down with the kid; and the calf and the young lion and the fatling together; and a little child shall lead them.
Isa 11:7 And the cow and the bear shall feed; their young ones shall lie down together: and the lion shall eat straw like the ox.
Isa 11:8 And the sucking child shall play on the hole of the asp, and the weaned child shall put his hand on the cockatrice' den.

Life was so perfect there, that no one had to eat anything. Adam didn't eat any fruit at all, not even the forbidden fruit, until the devil tempted him by convincing how much fun it would be to eat it.
It was then that everyone was bounced from paradise and had to start raising or catching things to eat.
