Raw cheese is made from raw (unpasteurized) milk, either cow or goat. Some people say that the increasing number of people who are intolerant of milk/lactose is due to the pasteurizing process. Although I haven't found conclusive evidence of this, it is a rather interesting theory.

If it's raw, that means it's not aged. Mst cheddar i see is aged.
