I have mondays dinner planned, but the rest of the week is a blank!

I am having beef stew monday. Then pork chops, and steaks one night! Need a recipe? here are a few good sites..........

Tonight I made a fantastic grilled chix Ceasar salad, tomorrow is a *early* Thanksgiving dinner, Tuesday is Sloppy Joes, Wednesday is lasagna in a crockpot and the rest of the week is to be determined!

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.




Taco Soup


1 pound extra lean ground beef -- rinsed and drained

1 Large onion -- chopped

48 ounces canned pinto beans -- drained

3 cans 16 ounces canned corn -- undrained

16 ounces canned tomatoes -- undrained

16 ounces tomato sauce

1 1/2 cups water

4 1/2 ounces green chili pepper

1 envelope Hidden Valley Dip Mix

--HOMEMADE TACO SEASONING-- --

1 1/4 ounces

2 tablespoons chili powder

1 1/2 tablespoons cumin

1/2 teaspoon red pepper flakes -- or powder

1 1/2 teaspoons garlic powder

1 1/2 teaspoons onion powder



Cook beef and onion until beef is browned; drain, mix beef and onion with other ingredients in a large pan. Bring mixture to boil, reduce heat and let simmer for 15 minutes.

Makes 3 1/2 quarts of soup. Make 14 (1 cup servings)

NOTE: This soup freezes well and can be kept in freezer for up to 3 months.

NOTES : Per serving: 215.5, 6.7g (26.9%), 6.1g fibre, 748mg sodium.3.65 points

VARIATIONS: Use black beans instead of pinto beans or do a mixture of them.

Spaghetti, salad, fruit cup

Baked Fish, oven fried potatoes, spinach

Chicken Cheesy Rice, broccoli , jello with cool whip

Spaghetti pie made from leftover spaghetti, raw carrots with dip

Pork chops, mashed potatoes with pork gravy, pickled beets

Leftover chicken cheesy rice with a can of cream of mushroom soup added, chicken broke up and put in a casserole dish, baked carrots

I made a big pot of spaghetti sauce today, that's worth about three days. I also have home made tacos planned. I'll be making a mexican chicken dish too, baked with monterey jack cheese, and chile peppers. I have a huge green salad prepared to last a couple of days too.

Tomorrow we're going out to dinner since Im travelling, then Tues will prob be tortollini, Weds maybe chicken fried rice (chicken helper), thurs pizza?, and friday either leftover fried rice or maybe beef strogonoff...havent really planned since its just me this week.

Actually I'll be making sloppy joes one night for my girlfriend and her kids... my secret is I take the manwich mix with the ground beef, but I add fresh garlic, a tiny bit of habenero sauce and a few other spices, then mix with finely chopped onions. It totally makes ordinary sloppy joes rockin'.

This week I'll also be making tuna steaks broiled and basted with lemon, olive oil, thyme, salt and pepper.

Tuesday- Meatloaf, mashed potatoes, carrots.
Wednesday- Grilled chicken breast, rice, broccoli.
Thursday- Pork chops, scalloped apples, spinach.
Friday- Fish, macaroni and cheese, green beans.
Saturday- Spaghetti, Meatballs, Garlic bread, salad.
Sunday- Pot roast with veggies, corn, salad.
