Mmm...good suggestions so far!!! Oh and no popcorn--I OD'd on that a few nights ago. I still have kernals stuck in my teeth!

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

We own a restaurant, and sometimes my wife will get hungry for something. She doesn't know what it is, nothing suggested to her sounds good, but she's still hungry. She doesn't want a full heavy meal, but she doesn't want just a snack either. That happened not long ago. And this is what I did...

Knowing her favorite sandwich is a "Double Deck" BLT (Bacon, Lettuce, Tomato) I took some cold, crisp bacon out of the refrigerator and diced it up. I then took some cold, crisp lettuce and shredded it. Next, I took some cold ripe tomato and diced it up. I put it all together in a bowl with a touch of salt and pepper, a hint of mustard and added some fresh Mayonaise. Just like I was making Tuna or Egg Salad.

Her favorite bread is Rye. I took 3 pieces and made a "double deck" sandwich and sliced it in 4 pieces like you would a "club sandwich"... It is now a family favorite.

It has all the flavors of the ingredients in every bite. It goes great with either a hot or cold drink. Everything from fresh hot coffee, hot chocolate, your favorite soda or milk. And it is filling without making you feel like you swallowed a rock...

Cinnamon Clusters On-the-Go


1-1/2 cups POST HONEY BUNCHES OF OATS with Cinnamon Clusters Cereal
1/2 cup yogurt-covered raisins
1/2 cup chopped dried apricots
1/2 cup PLANTERS Pecan Pieces
1/4 cup dried cranberries



COMBINE all ingredients in large bowl.
SERVE with low-fat yogurt, if desired.

Wheat French Bread Pizza
Take a loaf of French Bread in wheat.
put Alfredo sauce on it.
Top with spinich, grilled chicken, garlic, black olives, mushrooms, mozz cheese, sliced tomatoes & whatever else you may like.

Place in oven on 350 and enjoy!! YUMMY:)
(That's what I had for dinner tonight)

Whole grains. If you get hungry alot they stay with you alot longer.

This time of year, I love hot popcorn, though. And apple cider.

Mixed fruit in a bowl with tons of low fat whip topping. I love this, low in fat and healthy.

Make yourself a Sandwich!

Ham Salad Sandwich
Makes 6 sandwiches

This recipe is really great with Honey Baked Ham. Importantly, use a really good ham, it is worth it.

Ingredients

1 - pound good quality ham (Honeybaked Ham is ideal)

1/2 - cup salad dressing (or mayonnaise)

2 - celery stalks, chopped

2 - tablespoon sweet relish

1/2 - onion, chopped

1/4 - teaspoon oregano

1/4 - teaspoon pepper

1 - tomato, sliced

6 - lettuce leaves

12 - slices of bread (your choice)

Directions

You want to add the ham, salad dressing (or mayonnaise), celery, sweet relish, onion, oregano, and pepper into a food processor.
Pulsate food processor about 4 times.
You want ingredients well mixed; however, only coarsely chopped.
Spread ham salad on a slice of bread, add 2 tomato slices, a leaf of lettuce and top with an additional bread slice.
Picnicking & Tailgating:

You want to wrap each sandwich in plastic wrap, place in a plastic container and keep in ice chest. At the picnic or tailgate site, take out of ice chest just before serving.


Beef-Pesto Panini
Makes 4 sandwiches.
Prep Time: 25 minutes
Ingredients

4 - teaspoons butter or margarine

8 - slices Italian bread, 1/2 inch thick

2 - tablespoons butter, softened

1/2 - pound thinly sliced cooked deli roast beef

1/4 - cup basil pesto

4 - slices (1 ounces each) mozzarella cheese

Pasta sauce, warmed, if desired

Directions

Spread 1 side of each bread slice with butter.
Place 4 bread slices, butter sides down, in large skillet or on grill pan.
Top with beef, pesto and cheese.
Top with remaining bread slices, butter sides up.
Cook over medium heat 4 to 5 minutes, turning once, until bread is crisp and cheese is melted.
Serve with pasta sauce.


Bridgeport Country Club Sandwich
Makes 4 servings.
Prep Time: 10 min.
Ingredients

6 - teaspoons butter (or margarine)

12 - slices white bread, toasted and buttered

12 - deli slices chicken breast (12 ounces)

8 - slices bacon, cooked

8 - slices tomato

12 - teaspoon mayonnaise or salad dressing

4 - sweet gherkin pickles

8 - toothpicks

Directions

Butter each pieces of toast on 1 side. Lay 3 slices of chicken on buttered side.
Cover this with buttered side of second slice.
Spread with mayonnaise or salad dressing; add 2 slices of tomato and top with 2 slices of bacon.
Cover with last piece of toast, buttered side to bacon.
Secure with 2 toothpicks and serve with pickle.

Cheddar - Crabmeat Salad Sandwich
Makes 4 sandwiches.
Prep Time: 15 minutes
Ingredients

1 - can (7-1/2 ounces) crabmeat, drained and cartilage removed

1/4 - cup sour cream

1/2 - cup cheddar cheese

1/4 - cup celery, chopped

1/4 - teaspoon salt

1 - teaspoon Worcestershire sauce

8 - slices tomato

8 - slices Italian bread

Directions

In a medium-mixing bowl, add the crabmeat, sour cream, cheese, celery, salt, and Worcestershire sauce. Mix well.

Spread the Cheddar-Crabmeat Salad filling on bottom piece of bread.
Add 2 slices of tomato and top with second bread slice
