Welfare Cake
"This cake is so moist that you would swear it was from a box!"
Original recipe yield: 1 - 9x13 inch pan.
INGREDIENTS:
3 cups all-purpose flour
2 cups white sugar
1/2 cup unsweetened cocoa powder
2 teaspoons salt
1 tablespoon baking soda
1/2 cup vegetable oil
2 tablespoons distilled white vinegar
1 1/2 teaspoons vanilla extract
2 cups water
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine flour, sugar, cocoa, salt and baking soda. Make a well in the center, and pour in the oil, vinegar, water and vanilla.
Mix well, then pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a toothpick inserted into the center comes out clean.

In a pinch, or with a good recipe, vinegar mixed with water or even plain run-of-the-mill soda can work as a decent egg replacer

Add the vinegar quickly and stir in — immediately put the pan in the oven and bake for 25 to 30 min. Cool thoroughly.
Optional: after you add the vinegar, you can put some frozen cherries, raspberries or cranberries on top of the batter (or you can mix them in beforehand

I made this once during the bird flu scare when we were off eggs. It was not as light as cakes with eggs but otherwise it was quite fine.This recipe is for a plain eggless sponge. You can make your own variations with this basic recipe.
* 2 1/2 cups all-purpose flour
* 2 teaspoons baking powder
* 1 teaspoon baking soda
* 1 (14 ounce) can sweetened condensed milk
* 1 cup orange juice
* 2 teaspoons vanilla extract
* 1 cup melted butter
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
2. Sift together the flour, baking powder and baking soda into a large bowl. In a large bowl, mix together the flour, baking powder, baking soda. Make a well in the center and pour in the sweetened condensed milk, orange juice, vanilla and melted butter. Mix well and pour into prepared pan.
3. Bake in the preheated oven for 30 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Back to square one from this week. My college has started and finding no time to sit in front of the computer. I took a break from my assignments to post a recipe. For a long time I wanted to bake a cake. I and my hubby are not sweet lovers, so I don’t get motivated to make cakes or any sweet dishes. After seeing Sudha’s chocolate cake I was all interested to bake a cake. I was crazy to bake the cake in the middle of the night around 12 a.m. and kept in the fridge after baking. I know that’s crazy thing to do...well that’s me. I got this recipe from Chow time’s blog and just followed her steps. Here goes the recipe!!
Method
Sift 3 cups of flour, 6 tablespoon of cocoa powder, 2 tsp of baking soda, ½ tsp salt
Whisk 2 cups of water, 2 cups of sugar, 1 tsp vanilla extract, 2 tsp vinegar, ½ cup oil. Whisk until the sugar gets dissolved.
Add the dry ingredients to the wet ingredients and mix well with help of hand mixer. Pour the batter into a greased oven pan or parchment paper lined. I used parchment paper since it is easy to clean.
Pre- heat the oven to 350 F and bake for 35 – 40 minutes. Keep checking once in a while, and insert a tooth pick into the cake, if the tooth pick comes out without sticky of cakes, you are all set. Take the pan from the oven.
Let it cool and keep in the fridge. Serve it cold.

YES! I KNOW this will work!
Now that you have the box mix, all you gotta do to replace the eggs is add one can of soda! Don't have a can? Then measure out what is it? 8 or 12 ounces of pop....that's equivilant to a can I think.
ANY flavor will work. Even Diet soda!

yes you can make a cake with out eggs and egg is just like an oil so you can you oil but the best oil to use is penut oil but if allergic use vegi oil

Yep, Dump Cake, allrecipes.com. It includes butter, a yellow cake mix, nuts, and fruit cocktail, no eggs. And it is good. My friend makes it, and everybody begs her to bring it to work potlucks.

White Vegan Cake
Ingredients:

Combine the molasses and applesauce in a large bowl. Combine remaining ingredients and stir into the liquid. (If the batter seems very dry, add a little more applesauce or a little water.) Bake in a nonstick 8 x 8-inch baking pan or one sprayed with a non-stick spray, in a 350° F (175°C) oven, for 30 to 45 minutes, or until it tests done.
The optional ginger makes an acceptable gingerbread. You can also leave out the ginger and add 3 or 4 tablespoons of cocoa to make a tasty but not very sweet or rich chocolate cake.
Lemon Tofu Cheesecake
Ingredients:
Crust:
2 cups graham crackers
1/4 cup maple syrup
1/2 tsp almond extract
Filling:
1 lb. firm tofu
1/2 cup sugar
1/4 teaspoon almond exact
1 Tbsp tahini or almond butter
1/2 salt
1 to 2 Tbsp lemon juice
1/2 tsp lemon zest
2 Tbsp cornstarch dissolved in
2 Tbsp soy or rice milk
Preparation:
Crust: Preheat the oven to 350°F (175°C). Crush the crackers and mix them with the syrup and almond extract in a bowl until moistened. Pour into a 9-inch pie plate, press evenly to form a crust and bake for 5 minutes. Cool while preparing filling.
Filling: Blend all ingredients in a food processor or blender until smooth (about 30 seconds). Pour the mixture into the crust and bake until the top is slightly brown, about 30 minutes. Cool and refrigerate until thoroughly chilled, about 2 hours.
