Back in the late 80's, TGIF Had a Conrty Fried Steak on the menu. My wife ordered it every time till it was taken off the menu. I would like to get the recipe and surprise her on her up coming b-day! Thank You......

Being an good'ol Southern Boy from way back, there ain't no specific recipes for country fried steak or what's called chicken fried steak in the parts where's I'm from. You start by tenderizin' yer steaks with a wood mallet or if you're really uppidy and can afford them metal ones made for hammerin' your meat go ahead and use that. Put some flour, salt and pepper (as much as yer tongue likes) in a pie pan and mix well. Beat a couple of eggs and put in a separate pan. Dip you steaks into the flour then into the egg and back into the flour. Fry your steaks in a skillet with about half an inch or so of oil until golden brown. When yer done cookin the steaks mix the left over flour into the oil you used to cook the steaks and add a bit of milk to make the gravy. There's an art to this last step so don't go rushin none. Mix in the flour slowly and stir the pan alot so you don't get no lumps. My Granny use to mix the flour with the milk and some cold water before adding it to the pan and she never got no lumps in her gravy. But don't fret none if'n you get lumpy gravy cuz my daddy always liked his gravy lumpy. (I thinks that's why he married mama) Any ways t'aint nothin fancy about chicken fried steak so don't go makin it harder that it is. Just flour, salt, and pepper some egg and fry it up. Don't need no fancy recipe!

Shoney's Country Fried Steak
(Frozen & Deep-fried) UNUSUAL
Recipe By: Roberta Haferkamp
Servings: 2

3 cups water
2 cups flour
2 teaspoons salt
1/4 teaspoon black pepper
4 cube steaks (4oz each)
1 1/2 tablespoons lean ground beef (yes tablespoons - see directions)
1/4 cup flour
2 cups chicken broth
2 cups half and half or milk
1/4 teaspoon black pepper
1/4 teaspoon salt

Put in water medium bowl.

Sift flour, salt, and pepper together in medium bowl.

Dip steaks in water, then in dry mixture. Repeat. Lay coated steaks on wax paper and freeze for 3 hours.

Deep fry steaks* in 350 degree oil for 8-10 minutes. Drain on paper towels.

Brown ground beef in skillet. Stir in flour, then remaining ingredients. Bring to boil, then simmer until thick. Pour gravy over steaks.

Serving Ideas: Serve with mashed potatoes, green beans or peas, hot rolls.

*Editor’s note: Use caution lowering frozen steaks into hot oil. Protect yourself from grease splattering.

Country Fried Chicken Steak with Cream Gravy

Ingredients

(8 servings)

3 lb Sirloin Tip Roast; *
1 ts Salt; To Taste
1 tb White Vinegar; Distilled
3 c Unbleached Flour
2 tb Pepper; Freshly Ground
1 x Vegetable Oil; For Deep Fry
2 tb Unbleached Flour
1 c Milk
1/4 ts Salt
1 x Parsley Sprigs


Instructions

------------CREAM GRAVY-------------------------------- --------------GARNISH---------------------------------- * Cut the meat into 1/2-inch thick slices. Pound the meat with a spiked meat mallet to tenderize. Cut each slice crosswise into 3 pieces. Place in a large bowl. Cover with water and add the salt and vinegar. Marinate for 2 hours. Combine the flour and pepper in a plastic bag and add the meat, (do not pat dry) 1 piece at a time, shaking to coat thoroughly. Heat the oil in the deep fryer or deep large skillet, over medium heat, to 350 degrees. Add the meat in batches (do not crowd) and fry until light brown, about 30 seconds per side. Drain the meat on paper towels and place it on a heated platter that has been tented with foil. For the gravy, pour off all but 2 Tbls of the oil in the skillet, leaving the browned bits. Heat over medium heat and add the flour, stirring and scraping up all of the browned bits for 3 minutes. Remove from the heat and gradually whisk in the milk. Stir in the salt and continue to whisk until thickened, about 1 minute. Serve over the steaks and garnish with parsley just before serving.

Go to www.Recipezaar.com or www.Allrecipes.com and they should have a good country fried steak recipe for you. They may not be the authentic TGIF recipe, but one should be pretty good or close. Good luck. If all fails, call the restaurant and talk to the head cook, see what he knows about the recipe.

COUNTRY FRIED STEAK

1 1/2 - 2 lb. bottom round, top round, rump, shoulder or sirloin tip
Flour
Salt & pepper
Seasoned salt
1 sliced onion

Dredge meat with flour and brown in hot fat. Brown thoroughly and cook slowly for dark rich flavor. Sprinkle with salt, pepper and seasoned salt. Add 1/2 cup water; cover and simmer 30 minutes. Top with sliced onion. Cover and simmer 1 hour. 6 servings
