If it isn't powder yes they will. The Ready To Drink varieties definately turn bad, and should be kept refridgerated.
If it is protein powder, then as long as it has been kept closed and in a cool place it should remain okay for years. If it has been unsealed in a humid environment then it will go bad much faster.
I have safely used protein powders that are years past expiration. You should mix your protein powder in water just before drinking it. Don't even mix it and take it to the gym with you. Take the dry powder in your shaker cup and add the water and drink it after your workout.

if you mix it with a liquid and let it sit out or even if it's in the fridge for a long time..it will expire
kinda like milk
i left a bottle with some protein mixed with water in my car for about a month..it turned green and it did not smell good!
