Buffalo tastes similar to beef.
Duck is very gamy, rubbery, chewy and greasy
and lamb has a very unique taste. I don't like lamb.
You can cook them all the same way you' d cook any other meat.

To me, Buffalo (most of it) tastes like the leaner, tougher and dryer parts of beef. Namely "Eye of Round", etc., And to me, has a slightly "gamey" odor when fried or grilled...For that reason, I prefer the roasts or prime rib. In other words, slow roasting the meat works the best for me...
There are a couple of downsides to duck... First of all; It is very greasy and oily tasting and tastes nothing like chicken...Which leads to my second dislike; It takes a very long time to prepare it and do it right... The Chinese, who seem to have a monoply on preparing tasty dishes from duck. Like to use an open flame when initially preparing duck. Then, they move on to roasting... Like pork, duck will do better with a sweet fruit or citrus sauce, rather than something salty or sour. Duck is like Mince Meat Pie for me... I love it once a year and then I'm good until next year...
Lamb is a whole nuther thing... There's the fat issue, but like most pork or beef, some fat in the meat adds to the texture and flavor. Regardless of what the purist say, lamb chops do tend to taste like pork chops... The biggest arguement I hear about Lamb, is "how done" ? Some people love their lamb rare. I like rare beef, but if there's much fat on the meat, I have to have my lamb a little more on the medium side.
Lamb can be enjoyed just about any way you care to cook it. Even in stews. With all of these different meats (even duck) you'll want to experiment with different spices and cooking technic, as well as different cuts of the Buffalo and Lamb.
No matter which of the three you decided to try. First of all: Decide the style of cooking you like best... Mexican, Italian, Greek, etc., and find a recipe using either the Buffalo (in place of beef probably) the duck, or the lamb... I'm sure you'll be pleased.

Lamb... is more on the steakish side. Usually a bit more moist.
Duck... is like a chewy greasy chicken
Buffalo... Oh, why not try Fridays? They have great wings?, but wait.. that taste like chicken... and I didn't know buffalo could fly? And I thought they were a whole lot bigger too... Oh well

Buffalo tastes like ground beef. It is very lean. I have never had duck. I have heard it is dark meat and fatty. I like white chicken meat so I don't think I would like Duck. Lamb I have had a few times. I don't mind it.

They are all unique and the only way to know is to taste. Trying to describe would be like trying to explain color to someone with their eyes closed.
You can grill or roast but I prefer grilling small portions of all meats as the flavor seems better.

Buffalo is much lower in fat than beef, and is like healthy beef. A good recipe fur duck is to boil it in a pot of water with a rock , then eat the rock. Lamb really has to be cooked perfectly or its gross.

Duck tastes a little like chicken, but more flavorful if it's cooked correctly.
Lamb is awesome. It's tender. It tastes like pork.
You cook them all the same way you do any meats.

I had duck for the first time last Christmas. It was roasted- like a turkey. The taste is heavenly. Picture turkey meat, dark- but richer tasting- its hard to explain, but I really liked it.

Bufflalo actually to me taste like ground beef. but it is a lot healthier for you than beef. Duck is just to oily for me. I have made it several differnt ways and it is always has to much oil. Lamb is outstanding, SO,
Lamb-real tinder ribs
Duck- chicken but real oily
Buffalo-ground beef
