Two people are listed in the Bible who never saw death:
1. Enoch
2. Elijah
Moses did see death, the Bible even says so. The only thing that happened with Moses and his death is that God did not want anyone to know where he is buried. In the Book of Jude, there is a verse that mentions Michael disputing with Satan over the body of Moses. Why would this happened? Well Satan wanted to take Moses' body and make a shrine or temple with him directly buried underneath it. Satan knew that the people loved Moses, which Moses is one of the top prophets in the OT times. Satan wanted to get people to worship Moses and get there focus off of God. God knew this and he sent Michael to bury Moses, which Satan does not know where Moses' body is or Satan does know but God will not let Satan get the body.
Enoch and Elijah are said to be the two witnesses in Revelations, because they have not seen death just yet. They will die though, even human being is subject to death and every human must see death before judgement has been set, evil and death conquered, and satan and his demons cast into the lake of fire. The two witnesses will see death after preaching for three and a half years during the tribulation. The Beast(the antichrist) will rise up and kill them, but three days later, God's spirit will move through them and resurrect them, thus they will ascend into heaven and everyone on e the earth will be in shock and awe when this happens.

Enoch Moses Elijah and Jesus
so that would be 4
Not that these people even existed
EDIT:
Although Moses is reported as having died, there was also a quite common belief in Judaism that Moses did not die. That is why moses appears on the mount with Jesus in the 'transfiguration'. Which is why there is no tomb of Moses even at the 'time of christ'. Jude mentions the dispute over his Moses body but this was to do with his 'resurection'. Alot of jews 2000 years ago believed that Moses had resurected, and was not dead.. Sure this is not common amongst christians today but so what.
I am taking 'death' as in die and stay dead.
Elijah and Enoch would be the only to that never 'tasted of death' so to speak

Genesis 5:24 tells us, "Enoch walked with God; then he was no more, because God took him away." 2 Kings 2:11 tells us, "...suddenly a chariot of fire and horses of fire appeared and separated the two of them, and Elijah went up to heaven in a whirlwind." These two verses describe the only two occurrences in the Bible of people be taken to Heaven without having died. Enoch is described as a man who "walked with God for 300 years" (Genesis 5:23). Elijah was perhaps the most powerful of God's prophets in the Old Testament. There are also prophecies of Elijah's return (Malachi 4:5-6).

Mary, the mother of God, also never died. Instead she had an assumption. She was, of course, a woman, and may not be part of this answer due to her sex, but absolutely must be mentioned here.
Moses died, but without seeing Israel.
Jesus obviously died. He suffered, died, and was buried. On the third day he rose again in fulfillment of the scriptures. He is seated at the right hand of the father. Sound familiar? Sorry, I thought that was pretty obvious.

Enoch Moses Elijah and Jesus
Melchizadek is said to have never died by the book of Hebrews I believe. However, it is Hebrew tradition (Oral) that he was indeed Ham, the eldest son of Noah, who did, indeed, die.
Jesus was a priest in the order of Melchizadek because of more spiritual reasons than because of his life span.

Melchizedek, God's high priest. There is no reference to his death, which is why Jesus is spoken of as being "a priest forever according to the manner of Mel·chiz´e·dek.” (Hebrews 5:6) This means his priesthood would never end
