Chocolate Chip Pumpkin Cookies
4 cups all-purpose flour
2 cups sugar
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 teaspoon salt
1 can (16 ounces) solid-pack pumpkin
1 cup vegetable oil
2 eggs
2 tablespoons milk
2 teaspoons vanilla extract
2 cups (12 ounces) semisweet chocolate chips
1 cup chopped walnuts
In a mixing bowl, combine flour, sugar, cinnamon, baking soda and salt. Add pumpkin, oil, eggs, milk and vanilla; beat on medium speed until well mixed. Stir in chocolate chips and nuts.
Drop by tablespoonfuls onto greased baking sheets. Bake at 375° for 13-14 minutes or until edges just begin to brown. Cool for 2 minutes; remove to a wire rack to cool completely. Yield: about 7 dozen.

Preheat oven to 350 degrees.
Cream together softened butter and sugar in large bowl.
Add pumpkin, egg and vanilla.
Beat until light and creamy.
Add dry ingredients and mix until well blended.
Stir in chocolate chips and/or nuts.
Drop by rounded spoonfuls on greased cookie sheet.
Bake at 350 degrees for 15 – 20 minutes.

½ tsp nutmeg
½ tsp salt
2 ½ cup flour
1 tsp baking soda
Directions
Cream butter and sugar in large mixing bowl. Add egg and vanilla. Beat until fluffy. Combine flour, baking soda, baking powder, cinnamon, nutmeg and salt in a separate bowl. Add to butter mixture alternately with the pumpkin beating after each addition. Drop rounded tsp on lightly greased cookie sheet. Smooth tops. Bake at 350 degrees for 15 to 20 minutes or until lightly browned. Cool.
Top with Cream cheese frosting:
3 ounces Cream cheese
½ cup butter
1 tsp vanilla
2 cups powdered sugar
Combine frosting ingredients in a small mixing bowl. Beat until light and fluffy. Put this on top of these cookies and you will be in heaven. I promise you that. !

* 2 large eggs
* 1 cup mashed or canned pumpkin
* 1 teaspoon vanilla extract
* 2 1/2 cups flour
* 1 tablespoon baking powder
* 1-2 cups chocolate chips
* 2 teaspoons pumpkin pie spice
PREPARATION:
Preheat oven to 375° F.
In a large mixing bowl, beat butter and sugar together until light and fluffy. Beat in eggs, one at a time; stir in pumpkin and vanilla extract. In a separate bowl, combine flour, baking powder and spices; stir to blend.
Add dry ingredients to butter and sugar mixture; stir well. Stir in chocolate chips. Drop by rounded teaspoonfuls about 1-inch apart onto greased baking sheets. Bake in upper half of oven for about 12-14 minutes. Remove pumpkin cookies to wire racks to cool.
