Why stop your meds? If you are having an allergic reaction or unpleasant side effects, that is one thing. Talk to your doctor if those apply.
If they seem to be working, don't stop abruptly. You may feel fine, but why stop meds if they are doing their job?
It is NOT recommended to stop taking any medication without your doctor's knowledge. Especially if you're in a manic phase. That could leave you in dire straits and liable to engage in risky, inappropriate behavior.
Don't do it to yourself. Please see a dr. or go to an ER ASAP before you discontinue your meds.

Lithium does not cause a crash. Nearly always, a manic episode is followed by a crash into depression. That's just the way the illness works. If lithium isn't enough to prevent the highs, you may need to switch or add another mood stailizer.

No, lithium is a mood stabiliser. It will stop your mania, and should also stop you swining into depression. However, it may not be the best med for you: if you rapid cycle (swings over weeks or days) then there may be better drugs for you.
Either way, you should settle out in a stable condition. Your 'stable' point may be slightly depressed, in which case you may be given antidepressants to bring you up to a normal level, but the key is stabilise your moods first

Well, lithium stabilizes the mood so that you don´t get the mood swings but if you do get depressed, then for sure you will have to take an antidepressant for only two weeks.
