It's actually called a "line level converter" and can be found at wally world.

Run a wire from the (+) side of the battery to a switch and then to the remote connection on the amp. This way you can manually turn the amp on/off.

You need to get a high pass convertor.
The high pass convertor uses the speaker wire's from your factory stereo and converts them to a lower frequency.You connect your speaker wire's to the convertor,the convertor has RCA jacks that go to the amplifier.There is no need to cut the wire's though,just tap into the speaker wire if you are going to run only subs off the amp,then the stereo will still run the factory speakers.
Some amps come with High-pass input's that you can use instead of RCA's,though it's not the best way as it tends to capture more noise than low level output's.

use a amp with high level in lines or get a line level converter wire the remote wire to a fuse that is controlled by the the key.
