Do you think that having a clause explaining: who you wish to care for your kids and what religious upbringing you want for them is a must?

Try very hard to incorporate that religious upbringing "silently" by having their care left to a named, trusted person rather than stated in the will.

A last will and testament that establishes a revocable TRUST is a good way to protect your children monetarily. Such trusts can be established on their own or as part of your will (those called into being by a will are called "testamentary trusts.")

You can certainly do that, and it would be good. At least it would be known your desires. However, legally, I think it cannot be enforced, at least the part about religious upbringing. Custody certainly can be, but again, it can be challenged in court.
However, if you think about it, you can direct any monetary funding to the person/persons that you trust would do your wishes in the form of a trustee. At least they would have a say on how your children's resources were spent. See a good family lawyer about this issue. I highly recommend it.

Yes...if you have substantial assets to do so. I would not put anything in it of the religious sort. That's asking a lot and the kids can decide that for themselves. Having been an executrix I can tell you it is a LOT of work and responsibility and I am not looking forward to the next time!

You should choose a Guardian for the children that is in agreement with your faith, and that can also act as a Administrator of the Trust that you establish for your children.

What ever religious will not change my kid direction. The only way to lead people to the right way and save their spirit.

A will can be contested. If you direct the money into trust funds and name a person you trust to oversee them, you'll insure the money goes where it should.

You can state who you wish to raise them, but you can'treally force any religion on the people you are handing them off to. Its best to pick someone who has the same religion(or lack there of, for atheists) that you do
