Easy Mushroom Sauce

This easy mushroom sauce is delicious with steak or roast beef. Use sliced button or crimini (baby bella) mushrooms in this recipe.
INGREDIENTS:
8 ounces sliced mushrooms, button or baby bellas (crimini)
1 tablespoon butter
1 tablespoon olive oil
1/2 cup dry red wine
1 cup beef broth
2 tablespoons flour
3 tablespoons cold water
salt and pepper, to taste
1 teaspoon dried parsley flakes
PREPARATION:
Sauté mushrooms in butter and oil for 3 to 5 minutes, stirring occasionally; add red wine and simmer for a few minutes. Add beef broth and simmer to reduce a bit, about 5 minutes. Combine flour and cold water and whisk until smooth. Stir into the mushrooms until well blended. Season to taste and simmer for about 1 minute, until thickened. If too thick, add a little more broth. Add parsley and salt and pepper to taste. Makes about 1 1/2 to 2 cups.

The key is to use a very hot pan with a pat of butter (a cast iron skillet works best, but any frying pan will work. Throw in the sliced mushrooms with fresh crushed garlic and salt & pepper. sautee over high heat so that they brown (this is where all the flavor is). Make sure not to overcrowd the pan as the mushrooms will begin to steam as they release water, you dont want this. Cook for about 5-6 min, add a splash of white wine (chardonnay is great) and cook for another minute. Remove from flame and add a scoop of sour cream and mix well. Top with fresh finely chopped parsley and serve...You can't go wron with this one...I can eat these as a meal.

Heat a pan. Melt some butter. Saute the garlic. Add the mushrooms and cook for a few minutes, then add a splash or two of white wine and some lemon juice. This is a great fililng for omelets.

Duxelle
This is a classic preparation that’s good for button mushrooms. Christine Stamm suggests that you prepare a duxelle and then refrigerate it in ice cube trays. You can add the small duxelle cubes to lasagna, soup, stews or sauces.
½ pound of cultivated button mushrooms, finely chopped
3 tablespoons olive oil or butter
2 shallots, minced
cream, to taste, optional
In a heavy skillet, sauté the mushrooms, oil or butter and shallots. Allow the mixture to "sweat" so that by slow cooking the mushrooms begin to give off their water. Add cream just to bring the mixture to a consistency that looks easy to work with. Freeze in ice cube trays.

The best wine to use to make sauted mushrooms would be Red. A good Cabernet goes well with mushrooms and garlic.
