It makes it creamier. Also it tastes better. Think of it like chocolate milk- would you rather have it in water or milk? milk is creamier and tastier. Dark chocolate has more cocoa beans and less sugar in it to have a "darker" chocolate taste and color. Milk chocolate has milk and sugar with it to make it taste creamy and yummy. i don't know if this will help you though

It helps to make it smooth, and because it is sweet it helps counter the bitterness. Cacao is VERY bitter and also kind of grainy.
