Homesteader Cornbread
INGREDIENTS
1 1/2 cups cornmeal
2 1/2 cups milk
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
2/3 cup white sugar
2 eggs
1/2 cup vegetable oil
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). In a small bowl, combine cornmeal and milk; let stand for 5 minutes. Grease a 9x13 inch baking pan.
In a large bowl, whisk together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs and oil until smooth. Pour batter into prepared pan.
Bake in preheated oven for 30 to 35 minutes, or until a knife inserted into the center of the cornbread comes out clean.
Golden Sweet Cornbread
INGREDIENTS
1 cup all-purpose flour
1 cup yellow cornmeal
2/3 cup white sugar
1 teaspoon salt
3 1/2 teaspoons baking powder
1 egg
1 cup milk
1/3 cup vegetable oil
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Spray or lightly grease a 9 inch round cake pan.
In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil until well combined. Pour batter into prepared pan.
Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Amusement Park Cornbread
INGREDIENTS
2/3 cup white sugar
1 teaspoon salt
1/3 cup butter, softened
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1 tablespoon baking powder
3/4 cup cornmeal
1 1/3 cups milk
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 8 inch skillet.
In a large bowl, beat together sugar, salt, butter and vanilla until creamy. Stir in eggs one at a time, beating well after each addition. In a separate bowl, mix together flour, baking powder and cornmeal. Stir flour mixture into egg mixture alternately with the milk. Beat well until blended.
Bake in preheated oven for 20 minutes, or until golden brown. Serve warm.
Grandmother's Buttermilk Cornbread
INGREDIENTS
1/4 pound butter
2/3 cup white sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 teaspoon salt
DIRECTIONS
Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.
Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.

Heat a lightly greased 8-inch cast-iron skillet in a 400 degree oven 5 minutes.
Combine all ingredients, stirring just until moistened.
Remove prepared skillet from oven, and spoon batter into the hot skillet.
Bake at 400 degrees for 20 minutes or until golden.

Use jiffy cornbread mix, just using about 2 more tablespoons of milk makes it crispier on the outside and moist and a little sweet, and a little fluffier inside, spread a little butter on top when you take it out of the oven YUMMY

I use Jiffy mix a lot - the box calls for 1 egg and 1/3 cup milk. I increase milk to 1/2 cup so it wont be dry and add 1 TBSP sugar or splenda. Recently I tried Sylvia's brand cornbead mix and it is really good - has a slight cinammony taste to it and a great texture. She has a number of soul foods and seasonings, and they are all great.

I add a little extra milk and a good tablespoon of honey to a corn bread mix. I bake it in glass cake pan and I cut the baking time just a few minutes. It turns out moist and sweet everytime.

why buy mix?
1 cup flour
1 cup corn meal
2 eggs
1 cup milk
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
1/4 cup shortening
beat all ingredients with hand mixer til just smooth
bake in greased 8x8 pan for 20-25 minutes at 425 degrees

I use the recipe on the container of Quaker yellow corn meal. I might possibly add a little more shortening, but it comes out good -- pretty moist, not so crumbly.
