The key to a moist cookie is to not bake them all the way. Take them out when they are still a little doughy. After they have cooled, keep them in a container with a slice of bread. Try spreading your dough onto a large cookie sheet and bake them like bars instead of a cookie--they will always turn out moist and chewy.

Melt the butter first, cool it, then use an extra egg yolk. Very moist and chewy. I sometimes even use two extra yolks, but only when making a larger cookie.

Whatever amount of time your recipe calls for the cookies, take them out a couple of minutes earlier, let them cool and they will be chewy.

Put the butter and brown sugar in a microwave safe bowl and zap for about 20 seconds. Take it out and stir it together, then add it to the other stuff. The batter will be kind of runny at first, but will be fine once you add the flour mixture. Also, keep the dough in the fridge in between baking.

I'm not sure what recipe you have, but a trick that I learned is to take the cookies out of the oven a minute or two before they're actually "done". They will continue to bake on their own (from their own heat) and wont get as crunchy.

Try adding a little veg. oil or a little extra water than what the recipe calls for.
