OKay, here's my enchilada casserole:
Brown a pound of ground beef, season with garlic salt, paprika and red chile powder.
Use your fingers to tear corn tortillas into strips, line bottom of small baking dish.
Mix up a can of Cream of Potato soup with just a little bit of water (enough to kind of slosh around in the can to get most of the soup out). Set aside.
Spoon browned meat into a layer on top of corn tortilla strips.
Spoon and spread part of soup on top of that, spread evenly. Toss on some shredded cheese. Then do another layer, strips of corn tortillas, ground beef, soup, cheese. Bake in oven at 350 degrees until the cheese is thoroughly melted and bubbling.
You can double everything if making for a larger group of people, just use a bigger baking dish if you do.

Chicken Cacciatore
1 large onion, thinly sliced - 1 1/2 lb. skinless, boneless chicken breasts - 2 (6 oz each) cans tomato paste
8 oz. fresh sliced mushrooms - 1/2 tsp. Salt - 1/4 tsp. Pepper - 2 cloves garlic, minced - 1 tsp. Oregano
1/2 tsp. Basil - 1 bay leaf - 1/4 c. dry white wine - 1/4 c. water
Put sliced onion in bottom of crock pot. Add chicken pieces. Stir together tomato paste, mushrooms, salt, pepper, garlic, herbs, white wine and water. Spread over chicken. Cover; cook on Low 7 to 9 hours (High: 3 to 4 hours). Serve chicken pieces over hot spaghetti or vermicelli. 4 servings.
Chicken Broccoli Divan
1 lb. fresh broccoli, cut into spears OR 1 pkg. (about 10 oz.) frozen broccoli spears, cooked and drained
1 1/2 cups cubed cooked chicken OR turkey
1 can Condensed Broccoli Cheese Soup
1/3 cup milk
1/2 cup shredded Cheddar cheese (optional)
2 tbsp. dry bread crumbs
1 tbsp. butter OR margarine, melted
Directions:
ARRANGE broccoli and chicken in 9" pie plate or 2-qt. shallow baking dish.
MIX soup and milk and pour over all.
SPRINKLE with cheese. Mix bread crumbs with butter and sprinkle on top.
BAKE at 400°F. for 25 min. or until hot.

STOVE TOP® Easy Chicken Bake
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1-1/2 lb. boneless skinless chicken breasts, cut into 1-inch pieces
1 can (10-3/4 oz.) condensed cream of chicken soup
1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 bag (16 oz.) frozen mixed vegetables, thawed, drained
PREHEAT oven to 400°F. Prepare stuffing mix as directed on package; set aside.
MIX chicken, soup, sour cream and vegetables in 13x9-inch baking dish; top with the stuffing.
BAKE 30 min. or until chicken is cooked through.

Here's one I just learned, a good sunday meal......cut up about a pound of chicken and cook it in a frying pan. then mix in a bowl with cream of chicken soup and a bag of mixed veggies and top with stuffing (already cooked of course) and then bake at 350 for about 20 min. 15 min prep time, good luck.

buy some boneless chicken breasts, put in shallow pan and top with your fav. salsa, cook on 350 for about an hour cut the oven off top with mozz. cheese and remove from oven once cheese has melted
