You probably want something that doesn't impart too much flavor to the muffins. So you could use a canola oil, grapeseed would be too expensive but it would work. I'd stick with the canola or vegetable if you can.

To make a low fat muffin, use the same amount of applesauce or prune puree for the oil.

You could use half oil and half applesauce. I wouldn't leave out all the oil, you need it for emulsion with the eggs. You could use olive oil it's better!
