It comes from the fact that when you distill something, the alcohol is the first thing to evaporate and disappear, poof, gone to the sky, there and not there, existing but impalpable... So alcohol was regarded as close to the human spirit in nature.

So, in the middle ages, brandy was known as "spirit of wine". In time, all distilled drinks were known as "spirits", and the term came to apply to all alcoholic beverages.

Because in the middle ages, when people got drunk, they were said to have a "spirit" in them from the alcohol.People actually believed they were possessed when they were drunk. Hence, they referred to alcohol as "spirits"

Because once you start drinking, you slowly become possessed by something that is not you...you become someone or something else...
