On the package there is a quicker method. Wash and sort beans in a colander, cover with water in pot, bring to boil and boil for 1-2 minutes, then cover and remove from heat. Let it set 1 hour, then add your onion, spices, whatever and resume cooking on medium, stirring occasionally, for about 4 hours, or till done. If you are using a crockpot, it might be more like eight hours. Only add hot water to the beans or they will split. Yummy! Cornbread with mine, please. Rice is good too.

Do a quick soak. Bring the water and beans to a boil, cover and boil for a couple minutes. Turn the burner off and leave the lid on. Wait about an hour.
Although I've been known to boil mine for the full hour and nothing bad happens to them.
Drain the water, rinse, and use as normal canned beans.

You can use slightly hot water to soak it. Dried beans needs to be re-hydrated. when the beans were dried their micropores becomes so compact that water can't go in, soaking for a time is the only solution. Warm to hot water helps this process and reduces the hours required. I tried one with black eye beans...
I soaked it in hot water(not boiling), when the water cooled down re-soaked them in hot water, i was able to cook those beans in 4 hours time...try it all the best.

I like to rinse them at least 3 times before giving them the 'speed' soak! The way you speed soak is start with cold water, add a tablespoon of baking 'soda', thenbring them to a rapid boil for 10 minutes. Remove them from the heat and rinse them in cold water. Then prepare them as you usually do. However they will be done in half the time!

From a nutritional standpoint, CANNED beans are the equal of dried beans that have been soaked and cooked and they are much less work. That's what I use when I make ham & bean soup or anything else calling for beans.
