I just got my first set of good knives. I'm concerned about "practicing" knife-sharpening with the good knives, and would like to try it out first with some of the junk I have in my drawer. Question is, will this harm the sharpening steel and ruin it for the good knives?

no. but the steel you are refering to does not sharpen your knives it just trues the edges which if it was sharp thebn by truing the edges with help...you need to use sharpening stones to sharpen then the steel is used between sharpening to true your edges on your kbife..

I don't believe it will harm the steel. Those things are meant for sharpening dull things after all. I don't see how that could be bad for practice. Plus you get more sharp knives out of it!

No. I don`t sharpen new knives until it is needed. Also some never need sharpening.
