Squash and roasted potatoes. For the potatoes, pour some olive oil into a bowl and add whatever seasonings you like. Cut the potatoes into chunks (I like to leave the skins on) and toss them in the seasoned oil mixture. Put them on a cookie sheet and roast in the oven till tender. My husband wishes I'd do this more often -- ah, well.

Scalloped potatoes and baked or fried apples with lots of cinnamon would be good side dishes.
Broccoli casserole with rice and cheese or green bean casserole would also be delicious. So would candied sweet potatoes or sweet potato casserole.

Try fried apples and onions. It sound odd but 100 years ago it was a favorite with pork. Just peel, slice and stir fry around in a hot pan with a little dab of butter/oil and a bit of salt and or sugar if you like. Tasty quick and easy.

cook cauliflower and mash it like you would potatoes. steamed asparagus is also a good choice. you could also make a stuffing of some sort.
