It could be aesthetics. Which would be more appealing to you? A burger laying flat, or a burger bobbling around the plate on its top? After all, the buns rise when they bake.
But you do pose an interesting question as to why it's so thin.

I don't know, but here's the best way to avoid a mess- When you put the burger on the bun, flip it upside down so the bun bottom is on the top, and the thick top is supporting the burger on the bottom. It works great.

Some are thin and some are not. It depends on where they slice them. That is based on the calibration of the machine that does the slicing.

Due to the fact that the tops would be so small when cut. Some tops are dome shape.
