* salt and pepper to taste

2. Pour melted butter over broccoli (use more or less, to taste) and season with salt and pepper. Sprinkle cheese over the top and microwave, on high, for 1 minute, or until cheese is melted.

Cheesey Mac with Broccoli and Tuna
1 box Macaroni and Cheese (like Kraft), prepared and HOT
1 box frozen chopped broccoli, prepared and HOT
1 can tuna, drained (white tuna is best)
Mix everthing together. Season with some black pepper and salt to taste. Omit tuna if you do not like tuna. Also works with canned chicken. Also works with peas instead of broccoli.
Cheesey Broccoli and Rice
1 can condensed soup, Broccoli flavor
1 can condensed soup, Cheese flavor
1 tablespoon butter or margarine
1 box frozen chopped broccoli, PREPARED and hot
3 cups minute rice, PREPARED and hot
grated cheddar cheese
Mix the soups in a saucepan with only a half can of milk or water. (Use a LITTLE more liquid if too thick) Add butter and stir or whisk until well combined and hot. Stir in broccoli. Stir in rice. Season with salt and pepper. Sprinle cheese on top.
Note- the mixture will be thick and creamy NOT soupy...so don't use too much water or milk.
Steamed Broccoli with Cheese Sauce
1 Head of Broccoli, steamed and hot
I jar of Velvetta Cheese Sauce, microwaved in a bowl until hot
Pour hot cheese sauce over hot steamed broccoli

Cook your broccoli like you normally would. Melt Velveeta cheese in the microwave or in a pan on the stove. Add a little milk to the cheese to make it to the consistancy that you would like. Once the cheese is melted, pour over the broccoli and serve. Fast and easy

I'm a bit of a purist when it comes to broc -- steam, add s&p, a little butter - grated parm-regianno, if you like.
This is an interesting dish (I might omit the peas):
Broccoli-Cheddar Cupcakes
1 head broccoli, trimmed and chopped or 1 (10-ounce) package frozen chopped broccoli
4 large eggs, lightly beaten
¼ cup melted butter
¼ cup canola oil
1 1/2 cups low-fat shredded cheddar cheese
1 (8-ounce) package corn muffin mix
½ cup frozen peas, defrosted
About 3/4 cup your choice cheese spread, softened, or nacho cheese sauce
If using fresh broccoli, steam it about 5 minutes until cooked through. Run under cold water and drain. Then chop. Set aside.
If using frozen broccoli, cook according to package directions; drain. Run under cold water and drain well again. Set aside.
Preheat oven to 350 degrees. Place the eggs in a large mixing bowl and beat with an electric mixer on low speed. Add butter, oil and shredded cheese and mix on low speed to combine. Add muffin mix, broccoli and peas, mix on low speed another minute until just combined.
Spray muffin tins with no-stick cooking spray. Line with paper muffin liners and divide batter among muffin cups. Bake 15 to 20 minutes until lightly browned. Remove muffins from pan and cool on a rack. Before serving, spread top with prepared cheese spread or nacho cheese sauce. Makes 12 cupcakes.
