There is a discussion in my house just now, need people to resolve it.
What is cheese made of? someone says milk that is left for ages, and another person says its full of animal fat?

Not at all, some vegetarians, eat dairy eg milk eggs cheese.
And you get vegetarians that occasionally eat fish!!

Depends on what kind of cheese you're talking about.
The basis of most cheese is milk -- cow, goat, camel, or what have you. In the making of hard cheese, rennet (the lining of a calf's stomach) is added to the milk and the whole thing cooked until curds form. The curds are then put in a cheese press to remove the water, and once the mass is hardened, the cheese can be sold as such or further aged.
Soft cheese is soured milk that's cooked until the curds separate. They're drained over a period of several days and allowed to age, then placed over heat with a small amount of cream, salt, and often a lump of butter. The curds melt together with the other ingredients and are put in a container to cool. (Note: there are some soft cheese recipes that do involve eggs, but I don't have any more information or a recipe.)
Soy "cheese" can be made from tofu and other ingredients -- one of which is often casein. Casein is a dairy product, which means that it's not suitable for a strict vegan diet. You need to read the ingredients list carefully before buying if you're a vegan.

Cheese is milk fat. Milk has fat and sugar. The fat is called "curd" (the solids) and the sugar is called "whey" (the liquid). The milk you drink has been homogenized (a process to permantly combine the fat and liquid) so you cant tell there is fat in there.
Cheese is made from the curd, which is FAT. A chemical called Rennet is added to the milk to make the curds clump together and then the curds are pressed together into cheese. The type of animal milk, the processing and the aging determine what kind of cheese you end up with. Some cheese can be made from skim milk and have less fat, but it is fat nevertheless.
You can eat SOY cheese which is made from soybeans. It tastes like cheese but has no animal fat or animal products in it.

It's fresh milk, warmed to about 100F, then renet is added to form curds and whey. The whey is then drained off and fed to pigs and the curds are packed to form cheeses, then allowed to mature for as long as necessary for the type of cheese required.
It therefore contains fat from the milk which came from the cows....etc etc!
It is fresh milk and is NOT left to rot (!!!) and of course, 'sure as eggs is eggs' somebody had to go on wiki to find an answer because although they didn't know much if anything about the subject they still wanted to be seen as giving an answer. Well done. But why bother? Anyone could have done that.

Full fat milk normally, so the animal fat is part of the milk, most cheese contains around 60% fat , but it is not the greasy stuff you might be thinking of, but it is not a very good thing if you are on a diet, by the way I love the stuff

It's made with milk (not old stale milk) and yes, animal fat. That's why you can buy special vegetarian cheese that tastes fowl and is rock hard.

Milk, and bacterial cultures (dont worry its "good" bacteria). The type of cheese depends on what kind of milk (cow, sheep, goat) and also the type of cultures. Some cheeses are then aged or smoked or wrapped in different materials to impart flavors.

well u c. I use to be a vegetarian and I took a session so here is what I learned about chesse!!!!
-is a solid food made from the curdled milk of various animals—most commonly cows but sometimes ...
-About 2 cups of fresh milk is left to sit at room temperature for 24 hours until it curdles to the consistency of yogurt.
-2 gallons of milk is warmed to 86°F and the starter culture is blended in. This mixture is left overnight at a temperature of 50-60°F which will form lactic acid.
-Rennet contains a milk-coagulating enzyme and is traditionally made from the inner lining of a calf's stomach. Rennet is added to the milk to begin the formation of curd which, takes about 1 hour.
-The curd is then cut into small squares and stirred by hand. The curds(solids) and whey(liquid) are then slowly warmed to 102°F until the curd will hold its shape.
-The curds are then separated from the whey by draining through cheese cloth. The curds are salted, mixed, and hung for an hour.
-The firming curd can then be shaped into a round wheel form and pressed overnight. It is then left to dry a few days as a rind starts to form.
-The entire wheel of cheese is sealed in paraffin wax and left to cure at 40-60°F. After 6 weeks of curing, the cheese will be firm and have a mild flavor. Sharp cheese requires 3-5 months of curing.
-Cheese is a solid food made from the milk of cows, goats, sheep, and other mammals.
-Bacteria acidify the milk and play a role in defining the texture and flavor of most cheeses.
-For a few cheeses, the milk is curdled by adding acids such as vinegar or lemon juice.
-Vegetarian alternatives to rennet are also available; most are produced by fermentation of the fungus Mucor miehei, but substitute "vegetable rennets" have also been extracted from various species of the Cynara thistle family.
-Cheese is a solid food made from the curdled milk of various animals—most commonly cows but sometimes goats, sheep, reindeer, and water buffalo. There are hundreds of types of cheese. Milk is churned and agents are added to it to make it into cheese, any fat is just natural fat from the milk.

milk is stirred for a time the curds(solid) of the milk separates from the whey(water) the curds are then put into moulds too let the enzymes within the curds too form the cheese then its left too settle and solidify.
