I cut as much of the meat away from the pit by inserting my paring knife along the sides of the mango and working my way around. First on one side of the flat side of the pit and then the other. Then I cut those halves into manageable pieces and peel them. I wouldn't cut the peel off first - the mango becomes very hard to hold onto.
Does that make sense?

hold the mango lightly on the side. With a sharp knife start slicing from the stem horizontally to slice off just the meat and leave the mango seed .

cut a chunk out, take a knife to the inner side and cut stripes both ways, but not through the skin. then turn inside out and the squares peel off easily

Thats easy...Just peel it with a very shape knife.Like long ways...Then cut it in the middle and watch out for the pit...Then just cut it anyway your heart desires...
