I recently did a bunch of research on this. An UN-carved pumpkin can last for up to six weeks at room temperature, and even longer if it's cooled. However, once you cut a pumpkin, it starts to decay almost immediately.
Don't carve your Halloween jack-o'lantern any sooner than 3 to 4 days before Halloween, otherwise it will begin to shrivel. If you have the space, you can prolong it's life by storing it in the fridge. You can also re-hydrate the pumpkin by completely submerging it in cool water (in your bathtub or sink). However, this method will only work temporarily.
They also sell pumpkin-preserving sprays, which are composed mostly of vegetable oils. They do keep the pumpkin fresher, longer (the oils prevent the pumpkin from drying out, and they keep bacteria out, so the pumpkin won't rot too quickly). The sprays cost 6 or 7 dollars a bottle, so it's up to you whether they're worth buying.

Depends on how warm it is. If it's cold, it'll last a lot longer.
