You need a small paring knife, a utility knife, a chef's knife, a serated bread knife and a cleaver. So five at least. As a guide, when we bought our last set we paid £65 for a set of 5 in a wooden block with a ten year guarantee

I can't live without a good chef's knife. You can do just about anything with that. A paring knife for peeling apples is a handy knife, but a steak knife can suffice there, if need be.

Chef's knives are an odd duck. You can get one from the foodnetwork.com site with Emeril's signature for about $50 or a plain jane one at Wal-Mart for a couple bucks. Both will do any task you need it to do.

I have a French (chef's) knife that is 8 inches long, a boning knife, a paring knife and a serrated slicing knife for breads, ham and tomatoes. All other knives are optional. Steak knives come in handy if you have guests to feed and a good spreader knife will ice a cake in a jiffy but they are not necessary. The basic 4 are all you really need.

I can't live without my 8" chef's knife, and I have 2 of them. A paring knife, a serrated knife for breads and tomatoes. And a set of steak knives for little jobs or entertaining.

I think that's all you truly need for home use. If I could find a replacement, I need my old fish knife. That thing rocked, it was favorite light-duty knife.

I've used the one knife for everything [veg, meat, bread etc] for the last 20 years. Why? Cos it suits my hand. Its the right weight, length and sharpness for everything. If you find a good knife, and mine wasnt cheap but neither was it extremely expensive either, take good care of it and keep it sharpened. Mines a Wiltshire one that comes in its own sharpening box. I'll be lost without it.

I mainly use one small sharp paring knife though I have others. Buy one of those knife blocks with five knives. Thay should suit all purposes. Make sure they're reasonable quality !
