All commercial tenderizers use "papaine" that come from Papaya fruit. If you want to tenderize naturally, put some chunks of papaya in a blender, and rub your meat with this puree and let stand for a couple of hours. After this time wipe off the puree and you will enjoy a very tender steak or filet. Guaranteed.

Don't have time to wait? Know what a Jaccard is? Use a fork and poke the heck out of your steak. For an overnite tenderizer in a plastic resealable bag I use Papaya juice.
Footnote: any acid you use will break down the connective tissues but also break down the fat which gives flavor, just be careful how long you marinate with an acid.

Marinate in vinegar, wine, beer, cider or anything containing a good amount of any of those (add any seasonings to this that you like). These are natural meat tenderizers. Also, when you cook it, be sure to start on a preheated high heat to sear it, then you can turn the temp down a bit.

if you're going to cook it with sauce and in cubes, you can use a pressure cooker, if you don't have a pressure cooker, they say a spoon at the bottom of the pot will do the trick (we just haven't tried it since we use a pressure cooker). if you're going to use beef slices, the best way is to use a mallet and hammer it a couple of times...

Pierce several time with a fork - both sides - then leave to rest. A small amount of vinegar rubbed in can help.
