The flesh of the banana whether ripe or unripe is always white in colour. The only difference is that the the flesh of the banana will get softer as it ripens and the peel will turn yellow.

Creamy White color, a ripe banana is brownish inside, a very ripe banana is very brown, The browner the inside the sweeter the banana, until, of course it is too brown, then it is rotten, ick.
Ripe Banana's are perfect for making Banana breads and cakes.
