The corn on the cob that you can buy in Mexico in stands and carts is topped with a cheese called "Queso Fresco". I believe you can only buy it in a mexican market in the US. I just asked my cousin(im currently living in Guadalajara Mexico) and she told me that its simply "queso fresco"(fresh cheese) no american equivalent. The cob also has table cream. The cheese comes in a wheel and you must break it apart so its powdered.
First you toast the corn on a grill, then spread the cream and last you sprinkle the cheese so it sticks.
I would recommend you go to a mexican market and ask for the ingredients.

yeah jus any regular hard mexican cheese, dont forget to crumple it up, Put sour cream on the corn sprinkle the cheese on it and maybe some tapatio hot sauce, not you have authentic mexican corn they sell on the streets

I would guess Queso Fresco, it is available at supermarkets around where I live, call around, I'm sure it is readily available most places now.
