LOW CALORIE CHOCOLATE CHIP COOKIES
1 c. sifted flour
1/2 tsp. baking soda
1/2 c. butter
4 tsp. sugar substitute
1 egg, beaten
1/2 tsp. vanilla
1/2 tsp. salt
1/2 c. semi sweet chocolate chips (3 oz.)
Sift together the dry ingredients. Cream butter, add sugar substitute, vanilla and eggs, blending well. Add flour mixture and beat well. Stir in the chocolate chips. Drop by level teaspoons on a lightly greased baking sheet. Bake in a moderate oven, 375 degrees, for 10 minutes. Makes 36 cookies, each 48 calories

Triple Chocolate Cookies
1/4 cup butter, softened
1/2 cup dark brown sugar
1/4 cup granulated sugar
1/4 cup canola oil
1 egg
1 teaspoon vanilla
1/2 cup all purpose flour
1/2 cup whole-wheat pastry flour
1/4 cup unsweetened cocoa powder (not Dutch processed)
1/4 teaspoon salt, optional
1/3 cup dark chocolate (2 ounces) coarsely chopped
1/3 cup milk chocolate (2 ounces) coarsely chopped
2/3 cup chopped pecans, optional
Preheat the oven to 350 degrees F.
In a large bowl, mash together the butter and sugars with a fork until well combined. Add the oil and egg and beat until creamy. Mix in the vanilla.
In a medium bowl, whisk together the flours, cocoa powder, and salt. Add the dry ingredients to the wet ingredients and mix well. Stir in the dark chocolate, milk chocolate, and the pecans and mix well. Using a tablespoon, scoop the batter onto an ungreased cookie sheet.
Bake for 12 minutes. Transfer cookies to a cooling rack to cool.

To make chocolate chip cookies healthier, take a standard cookie recipe, and substitute whole wheat flour for white. Substitute stevia for sugar, at the rate of 1/2 tsp. stevia=one cup sugar. Stevia is by far the best natural sweetener. It has no calories, and is very concentrated. It is available at any health food store. Avoid all artificial sweeteners at all times. They are highly toxic to the body, as well as being addictive (rense.com). Refined sugars and flours should also be avoided, as they also have toxic effects on the body. Always bake with whole grain flours.

Diet Chocolate Chip Cookie
Ingredients (use vegan versions):
1½ cup raw cane sugar
1 cup vegetable oil (unrefined)
1 Tablespoon vanilla extract (non-alcohol)
2½ cups wheat flour (white, unbleached)
pinch sea salt (optional)
1 teaspoon sodium bicarbonate
1 teaspoon baking powder (non-aluminium)
2 cups vegan chocolate chips (ex. Sunspire®)
3 Tablespoons whole flax seed
1 cup filtered water
1 cup chopped nuts (optional)
Directions:
1. In dry blender or food processor, grind flax seed to fine meal consistency. While still processing, add water and allow to mix to a gelatinous consistency.
2. Mix dry ingredients.
3. Combine wet ingredients to dry. Incorporate well. (By hand is a good method -- dispense with the spoon.)
4. Shape into balls and press down to about ½ inch thickness. Bake at 350° oven for 5 to 8 minutes.
Serves: 20 (2½ oz)
Preparation time: 25 minutes

Healthy Chocolate Chip Cookies

1 cup whole-wheat pastry flour
1/2 cup granulated sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon wheat germ
1 medium banana
1 tablespoon sunflower oil
1/2 teaspoon vanilla extract
1/2 cup chocolate chips

Preheat oven to 350.
Mix dry ingredients in a large bowl and set aside.
In a smaller bowl, mash banana with oil until smooth.
Add vanilla extract and mix well.
Fold banana mixture into dry mixture until blended.
Stir in chocolate chips.
Place bowl in freezer for 5 minutes to harden dough.
Spray a baking sheet with nonstick cooking spray.
Place tablespoons of dough one inch apart on sheet and bake for 15 minutes.
