Amount Measure Ingredient -- Preparation Method

3 2/3 cups flour
1 1/2 teaspoons salt
3/4 teaspoon sugar
1/4 cup shortening (I use Crisco)
1 egg -- slightly beaten
1 cup milk
1/4 cup sesame seeds -- toasted
2 tablespoons poppy seeds

Sift flour with salt and sugar into a large mixing bowl. Cut in
shortening. Combine egg and milk. Stir into flour mixture, mixing well.
Dough will be firm. Let dough rest for 30 minutes. Preheat oven to 375
degrees. Sprinkle sesame seed on 4 baking sheets. Knead dough for 2-3
minutes. Divide dough into fourths; roll each piece to 1/16" thickness.
Place dough on prepared pans; brush with water and sprinkle with poppy
seed. Bake for 20-25 minutes or until browned and crisp. Break into
pieces and serve with butter. Makes 4 sheets. Enjoy!

Lavash (Armenian Cracker Bread)

1 pkt Dry yeast
1 1/2 cup Warm water
1 tsp Salt
2 cup All-purpose flour
2 cup Whole wheat flour
Toasted sesame seeds
Sprinkle yeast into warm water in large bowl and stir until dissolved. Add salt. Combine all-purpose and whole wheat flours and add enough to yeast mixture to make stiff dough. Turn out on floured surface and knead until smooth and elastic, 8 to 10 minutes. Shape into ball. Place in greased bowl and turn to grease top. Cover and let rise until doubled in bulk, about 1 1/2 hours. Punch down and let rise again until doubled, about 30 minutes.
Divide dough into 8 pieces and roll each out on lightly floured surface to very thin circle about 9 inches in diameter. Place, one at a time, on baking sheet and sprinkle with sesame seeds. Bake at 400F 5 to 6 minutes, or until bread appears dry, lightly browned and blistered. Run palest side under hot broiler until lightly browned. Cool and store in dry place.

1 package active dry yeast
2 cups water
1 teaspoon sugar
2 1/2 tablespoons olive oil
3 1/4 cups unbleached flour
1 3/4 teaspoons salt
4 tablespoons toasted sesame seeds
3 tablespoons poppy seeds

1In small bowl, stir together yeast, water and sugar.
2Let sit about 10 minutes to proof.
3Add oil.
4Combine flour and salt in food processor.
5With motor running, add yeast mixture through feed tube and process for 20 seconds.
6Stop to scrape down bowl with rubber spatula, then continue processing to form stiff ball.
7Turn dough out onto work surface and knead for a few minutes until dough is smooth.
8Place dough in oiled bowl, turn to coat, cover tightly with plastic wrap and let rise in draft-free place until doubled in volume, 1 to 1 1/2 hours.
9Preheat oven to 350 degrees.
10Combine sesame and poppy seeds in small bowl.
11Turn dough out onto work surface, flatten into rectangle and divide into 16 roughly equal pieces.
12Cover pieces you are not working with plastic wrap.
13On unfloured surface, roll each piece as thin as possible.
14Lift it up.
15Flip it over.
16And roll again until paper thin.
17You should have rectangle about 8 by 3 inches.
18Peel dough off work top and place on ungreased baking sheet.
19Prick holes in dough with fork.
20Brush lightly with water and sprinkle with about 1 tablespoon seeds.
21Repeat with remaining pieces of dough and fit as many pieces as possible on baking sheet without touching.
22Bake until golden brown, about 20 minutes, and cool completely on wire racks.
23Repeat until all dough is baked.
