When I roast meat in the oven, alot of oil is produced, which drops onto the oven tray. However, the oil always starts to combust in the oven, resulting in lots of smoke, even though the food isn't burning. The smoke obviously creates many problems, including setting off the smoke alarm... How do I get about this while I want to brown the skin on my chicken?

Get a catch tray under it so you can empty it.

First, start with a clean oven.

If you are roasting meat directly on the oven rack, put a drip tray or pan on the rack under the meat. Fill the drip tray or pan with some hot water and the oil will collect in there without burning on the hot pan. Leave the drip pan in the oven until it is cool before you take it out.

I'm not sure what an "oven tray" is.
I'm thinking of a broiler pan - a deep rectangular pan with a slotted rack fitted onto the edges of the pan. Seems like you'd be okay with this.
You could first brown your chicken in a skillet, then transfer to the oven to finish it.

Line the oven tray with aluminum foil and discard after every use.
also...to brown the skin of your chicken etc...use the broiler at the end of cooking.
You can also "braise" meat on the stove top before putting in the oven.

First clean the grease from the oven.

Second, the next time you cook, place an aluminum pan beneath the roast to catch the grease. Empty it often so there is no build up.

Put the meat on a pan? If you cook it in pan, I don't see how the oil drips out.
