Beef Pepper Steak For Two
2 servings
time to make 21 min 6 min prep
2 (6 ounce) filet of beef
salt and pepper
4 tablespoons flour
3 tablespoons oil
2 tablespoons butter
1/2 cup minced onions
2 tablespoons minced garlic
1 tablespoon chopped fresh parsley
1 (4 ounce) can mushroom pieces, drained
1 large green pepper, sliced in strips
1. Pound filets slightly.
2. salt and pepper the filets.
3. Dust with flour.
4. Heat oil in 12 in skillet on med hi.
5. Add steaks and brown on both sides.
6. Cook for 4 minutes.
7. Remove steaks.
8. Add butter.
9. Add onion, garlic, parsley, and mushrooms.
10. Saute for 2 minutes.
11. Place steaks on top of mushrooms; add pepper strips.
12. Cover and cook on med for 4-5 minutes, until pepper is crisp tender, and steaks are done to your likeness.

You could go two ways on this black pepper...
BEEF PEPPER STEAK
NGREDIENTS
* 12 black peppercorns, coarsely ground
* 2 tablespoons tamari
* 1 clove garlic, minced
* 1 pinch white sugar
* 1 pinch salt
* 10 ounces beef filet
* 2 tablespoons butter
DIRECTIONS
1. In a small, nonporous bowl, combine the peppercorns, tamari, garlic, sugar and salt. Add the beef filet and coat well on all sides. Cover and marinate in the refrigerator for 1 hour.
2. Melt butter in a medium saucepan over medium high heat. Place the beef filet in the pan and saute for 6 to 8 minutes per side, or until internal temperature reaches at least 145 degrees F (65 degrees C).

ITALIAN PEPPER STEAK
INGREDIENTS
* 1 teaspoon Italian seasoning, divided
* 1/2 teaspoon salt, divided
* 1/2 teaspoon pepper, divided
* 1 pound boneless beef sirloin steak, fat trimmed
* 1 medium sweet red pepper, julienned
* 1 medium sweet yellow pepper, julienned
* 1 medium onion, julienned
* 6 cloves garlic, peeled and thinly sliced
* 1 tablespoon olive oil
* 1 (14.5 ounce) can diced tomatoes, drained
* 1 teaspoon balsamic vinegar
DIRECTIONS
1. In a small bowl, combine 1/2 teaspoon Italian seasoning, 1/4 teaspoon salt and 1/4 teaspoon pepper. Rub mixture over both sides of steak; set aside.
2. In a large nonstick skillet, saute the peppers, onion and garlic in oil until vegetables are crisp-tender. Stir in the tomatoes and remaining Italian seasoning, salt and pepper. Reduce heat; cover and simmer for 5 minutes. Remove from the heat. Stir in vinegar; keep warm.
3. Place steak on a broiler pan coated with nonstick cooking spray. Broil 4-6 in. from the heat for 4-8 minutes on each side or until the meat reaches desired doneness (for medium-rare, a meat thermometer should read 145 degrees F; medium, 160 degrees F; well-done, 170 degrees F). Let stand for 5 minutes before slicing; serve with vegetable mixture.

Quick Pepper Steak
1 lb boneless beef sirloin or
top round steak, 3/4" thick
2 tbl vegetable oil
2 med green or red peppers cut 2"-long strips
1 med onion cut into wedges
1/2 tsp garlic powder
1 can Franco-American beef gravy - (10 1/4 oz)
1 tbl Worcestershire sauce
4 cup hot cooked rice
Slice beef into thin strips. (To make slicing easier, freeze beef 1 hour.)
In medium skillet over medium-high heat, heat half the oil. Add beef in 2 batches and stir-fry until browned. Set beef aside.
Reduce heat to medium. Add remaining oil. Add peppers, onion and garlic powder and stir-fry until tender-crisp. Pour off fat.
Add gravy and Worcestershire. Heat to a boil. Return beef to pan. Reduce heat to low and heat through. Serve over rice.
This recipe yields 4 servings.

"Quick and Easy Pepper Steak" - 4 to 6 servings
1 1/2 lbs. sirloin steak; 1/2" thick
1/2 tsp. salt
2 medium onions; chopped (about 1 cup)
1 cup beef broth
3 tbsp. soy sauce
1 clove garlic; minced
2 green peppers; cut into 1" pieces
2 tbsp. cornstarch
1/4 cup cold water
2 tomatoes; peeled and cut into eighths
3-4 cups hot cooked rice
Trim fat and bone from meat; cut meat into 4-6 serving pieces. Grease large skillet lightly with fat from meat. Brown meat thoroughly on one side; turn and season with 1/4 tsp. salt. Brown other side of meat; turn and season with remaining 1/4 tsp. salt. Push meat to one section. Add onion; cook and stir until tender. Stir in broth, soy sauce and garlic. Cover; simmer 10 minutes or until meat is tender. Add green peppers. Cover; simmer 5 minutes.
Blend cornstarch and water; stir gradually into meat mixture. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Add tomatoes; heat through. Serve over rice.
(Note: Beef broth can be made by dissolving 1 beef bouillon cube in 1 cup boiling water, or use canned beef broth bouillon.)
