Here are some Dough recipies:

Pan (cake) dough
Dough
1 cup warm water
1 package active dry yeast
1 tablespoon sugar
2 3/4 cups flour
1 ounce parmesan cheese
1 teaspoon salt
1 tablespoon olive oil, plus
1 teaspoon olive oil

In a measuring cup or small bowl, dissolve sugar & yeast in water.
Combine flour, parmesan and salt in a large bowl and make a well in the center.
Pour yeast mixure and oil in well and stir into dry ingredients; let rise 5 minutes.
Preheat oven to 350°F.
Heat olive oil over medium heat, add hamburger, onions and garlic, season with chili powder and saute until onions are tender and meat is browned, about 10 minutes.
Grease a 9x12" cake pan, and press dough into pan.
Pour 1/2 of sauce onto dough, layer 1/2 of all remaining ingredients, top with remaining sauce, then layer on all remaining ingredients (the cake pan will be full at this point).
Bake at 350F for 20-25 minutes until the cheese is lightly browned.

For thin crust:
2 1/2 cups all-purpose flour (may substitute whole wheat flour for 1 cup of the all-purpose)
1 (1/4 ounce) package active dry yeast
1/4 teaspoon salt
1 cup warm water
1/2-1 tablespoon olive oil
cornmeal, for sprinkling

Mix a little sugar into the warm water.
Sprinkle yeast on top.
Wait for 10 minutes or until it gets all foamy.
Pour into a large bowl.
Add flour, salt, olive oil.
Combine.
Knead for 6-8 minutes until you have a moderately stiff dough that is smooth and elastic (add a bit more flour if you need to).
Cover and let rest for 20-30 minutes.
Lightly grease two 12-inch pizza pans.
Sprinkle with a little bit of cornmeal.
Divide dough in half.
Place each half on a pizza pan and pat it with your fingers until it stretches over the whole pan.
Try to make it thicker around the edge.
If desired, pre-bake at 425 F for 10 minutes (I don't always do this).
Then spread with pizza sauce and use the toppings of your choice.
Bake at 425 F for 10-20 minutes longer or until bubbly and hot.
Makes 2 12-inch pizzas.
If you don't want to use all the dough, you can freeze it.
Take a portion of dough, form into a ball, rub olive oil over it and place it in a freezer bag (the oil makes it easier to take out of the bag).
When you want to make a pizza, take dough out of freezer and allow to thaw before using.

1 oz capers
1 oz Kalamata Olives
2 whole anchovy fillets
1 oz garlic
3 whole prawns; cooked
3 whole scallops; cooked
2 oz crab meat
1 oz parmesan cheese
3 oz mozzarella cheese; smoked
1 pn parsley
1 pn lemon zest
1 pn red pepper flakes; crushed

Instructions

Preheat oven to 500F with pizza stone. Hope your ovens clean, at 500 you're going to find out if the batteries are good in your smoke detectors.
Blend pesto and pizza sauce.
Spread sauce over pizza dough.
Cover with remaining ingredients.
Place on pizza stone in oven and bake until golden brown.

Quick Pizza Dough

2 c unbleached all-purpose flour (2 to 2 1/4)
1 pk fast acting yeast
1/2 ts sugar
2 tb olive oil
1/2 ts salt

Instructions

In a large bowl whisk together 3/4 cup of flour, yeast, sugar, and 2/3 cup hot water (130 degrees F). Stir in the oil, 1 1/4 cups of the remaining flour, and the salt and blend the mixture until it forms a dough.
Knead the dough on a floured surface, incorporating as much of the remaining 1/4 cup flour as necessary to prevent the dough from sticking, for 5 to 10 minutes, or until it is smooth and elastic.
Alternatively, the dough may be made in a food processor. In a food processor combine 3/4 cup of the flour, yeast, and sugar. With the motor running, add 2/3 cup hot water (130 degrees F), and turn the motor off. Add the oil, 1 1/4 cups of the remaining flour, and the salt and process the mixture until it forms a ball, adding more water, 1 teaspoon at a time, if it is too dry, or more flour, 1 tablespoon at time, if it is too wet. Knead the dough by processing it for 15 seconds. The dough, prepared by either method, may be used immediately, but for better flavor it is best to let it rise once. Put the dough in an oiled bowl and turn it to coat it with the oil. Let the dough rise, covered with plastic wrap, in a warm place for 30 minutes, or until it is double in bulk, and punch it down. This dough may be used instead of the basic pizza dough.
Makes enough dough for one 14-inch pizza or four 7-inch pizzas

* 2 1/4 teaspoons active dry yeast * 1/2 teaspoon brown sugar * 1 1/2 cups warm water (110 degrees F/45 degrees C) * 1 teaspoon salt * 2 tablespoons olive oil * 3 1/3 cups all-purpose flour DIRECTIONS 1. In a large bowl, dissolve the yeast and brown sugar in the water, and let sit for 10 minutes. 2. Stir the salt and oil into the yeast solution. Mix in 2 1/2 cups of the flour. 3. Turn dough out onto a clean, well floured surface, and knead in more flour until the dough is no longer sticky. Place the dough into a well oiled bowl, and cover with a cloth. Let the dough rise until double; this should take about 1 hour. Punch down the dough, and form a tight ball. Allow the dough to relax for a minute before rolling out. Use for your favorite pizza recipe. 4. Preheat oven to 425 degrees F (220 degrees C). If you are baking the dough on a pizza stone, you may place your toppings on the dough, and bake immediately. If you are baking your pizza in a pan, lightly oil the pan, and let the dough rise for 15 or 20 minutes before topping and baking it. 5. Bake pizza in preheated oven, until the cheese and crust are golden brown, about 15 to 20 minutes. Soo good. Roll it out on cornmeal to make it more authentic.
