One of the recipes on my "favorites list" is a recipe for blue cheese dressing that I got out of a book called "The Mafia Cookbook". It goes like this:

Mix together 1 cup mayonnaise, 1/3 cup heavy cream, 1/3 cup buttermilk. Add 1 or 2 crushed garlic cloves, a pinch of dried mustard, and 1 Tablespoon lemon juice. Add about 5 oz. crumbled blue cheese.

Cover and refrigerate. The dressing will become fairly thick in half a day. Use more cream and buttermilk if you want it thinner.

Blue Cheese Dressing

This recipe goes with Butter Lettuce Shrimp Salad with Pears and Blue Cheese

1/2 pound blue cheese (1 cup packed)
1/2 cup buttermilk
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon red wine vinegar
1 teaspoon dry mustard

In a bowl, break blue cheese into 1/2-inch chunks. Add buttermilk, mayonnaise, sour cream, red wine vinegar, and dry mustard; stir until blended. If making up to 4 days ahead, cover and chill; stir before using.
