Humans eat pigeons chickens ducks geese so why not seagulls. There appears to be plenty of them!

Seagulls have a digestive aid (like a vulture) in their stomach's and blood stream that enables them to eat just about anything that would make any other bird ill or die... That's why they are not for human consumption. Most birds lack this acid and have to swallow tiny pebbles and rocks that aid them in their digestion.

Humans don't have to nor should they consume the flesh of a scavenger...

No scavenger is fit for human consumption. Pigeons, chickens, ducks and geese eat vegetation. Seagulls eat garbage and carrion so they wouldn't taste very good anyway.

They've probably tried them and decided they didn't like them. Not all animals taste good, you know - camel's hump is decidedly rubbery, yet it is a rare 'delicacy' in some countries (the delicacy label justified by its price more than taste).

They are scavengers and it would be unsafe to eat them. Like eating ravens, rodents, coyote, etc. Gross.
