I think you should dampen them in water then throw them on a cookie tray wrapped in tin foil the put them in an oven at 350*F for 30 minutes.

I just made this and it was great. It is done on the stove top, in a saucepan. Dry roast the seeds in a pan (no oil) and when they begin to plump up (after a few minutes) add some minced fresh garlic and cook a few minutes more. Add chili powder (if you have dried chipotle chili peppers, grind them up to a powder...chipotle will give the seeds a smokey taste). Add some salt and take off the heat. Toss with a little sugar and there you have it. The measurments are according to taste. They are really good and different.

Try this one
Pumpkin-Seed Brittle
1/3 cup sugar
1/4 cup water
1/2 cup toasted pumpkin seeds (procedure follows)
FOR TOASTED PUMPKIN SEEDS
1/2 cup fresh pumpkin seeds unrinsed
1 tbl vegetable oil
Method :
In a heavy skillet combine the sugar and the water, cook the mixture over moderately low heat, stirring and washing down the sugar crystals with a brush dipped in cold water until the sugar is dissolved, and simmer it, undisturbed, tilting and rotating the skillet, until it is a deep caramel color. Stir in the pumpkin seeds, stirring until they are coated well, and turn the mixture out onto a buttered sheet of foil, spreading it evenly. Let the brittle cool completely and break it into pieces.
To toast pumpkin seeds:
In a bowl toss the seeds with the oil and salt to taste and on an ungreased baking sheet bake them in the middle of a preheated 250F. oven,
stirring occasionally, for 1 hour to 1 1/4 hours, or until they are golden and crisp. (Alternatively the prepared seeds may be spread in a microwave-safe glass baking dish, microwaved at high power (100%), stirring after every minute, for 4 minutes, and microwaved at medium power
(50%), stirring after every 2 minutes, for 6 to 8 minutes, or until they are crisp.)
Makes 1/2 cups.

Soak them in salt water overnight, then lay them out on a cookie sheet and sprinkle with McCormick's garlic sea salt and bake until golden brown!

Roast them in the oven and then carmelize them! (Boil water and sugar in a pot) Pour it over the seeds and wait for it to harden. Then you can break into small chunks. It's delicious!

I used one last year that was really nice kind of sweet and salty - all I remember is that I had seen it on Martha Stewart the day before Halloween - so you could probably find it on her website.
