Ignore all these other posts because they will get you laughed at! All you need is a quality cornmeal and some seasoning, forget all this other stuff. Just start off with a 1/2 cup of meal, salt & pepper. Then dependent on the type of fish you are frying you can add other seasonings. As an example I season Catfish, Crappie & lake trout differently. No need to deep fry fish, although it's easier for a novice to tell that they are done, unless you are cooking for 20 people. All you end up doing is flushing $4.00 in oil down the drain when all you need is a small amount in your skillet. You can use an egg, but you really don't need it to bind your meal to the fish as you would with chicken and why add more ingredients/calories when not necessary. Just make sure to keep your stove temp at medium heat and stay in the kitchen while it's cooking. Fish doesn't take long to cook, about 2-3 minutes a side.

I no longer fry fish,I use this recipe which was originally from Campbell's Kitchen and bake the fish. Crispy Oven-Fried Fish Fillets "Fish fillets coated with savory, seasoned crushed croutons are baked to golden goodness." Cook Time: 20 Minutes Servings: 4 Vegetable cooking spray 4 (4 ounce) fillets white fish* 1/3 cup milk 1/4 cup all-purpose flour 2 cups Pepperidge Farm® Generous Cut Zesty Italian Croutons, crushed** Tartar sauce Directions: 1. Preheat oven to 450 degrees F. Spray baking sheet with vegetable cooking spray. 2. Dip fish into milk. Coat with flour and then dip in milk. Coat with crushed croutons. 3. Place fish on baking sheet. Spray fish with vegetable cooking spray. 4. Bake for 10 minutes or until fish is done. Serve with tartar sauce. Notes: *Cod, haddock or halibut. **Or use your favorite Pepperidge Farm® croutons.

Use butter.............pan fry fish, either whole or filleted, presentation side down first, do not move around the pan until cooked on that side and then gently turn it over........You can serve with just the butter, beurre noisette or beurre noire, or add other things to the butter as the garnish, e.g. capers, prawns, shrimps, onions, mushrooms, what ever you would like depending on the fish you are serving.
