I make this soup often, so hence...it is "boiled" and cheap. It lasts for two people, about 3 meals average. For 1 person, double that. And if you are single and making this just for you, freeze half of it after making it (after it cools) so it stays better, and you can manage your meals better too. I typically also like to have a crusty French bread with this, or a baguette with it. It is very hearty and great for the winter months especially. You can leave out the spinach, and use Swiss Chard in place of it; or just leave it our completely. Your choice.
Great Northwoods Bean Soup
1 pkg. Beef or Turkey Kielbasa (Hillshire Farm is best)
1 can Great Northern Beans (drained and rinsed)
1 can Light Red Kidney Beans (drained and rinsed)
1 carton Swanson Low Sodium Chicken Broth (or Veg. or Beef broth can be used too. Try to stick with Low Sodium; otherwise the salt in the broth can be too overcoming when mixed with the Kielbasa - which is salty as well)
1 package chopped frozen spinach, thawed and rinsed (or use fresh, but you will need a full bunch of fresh spinach to achieve best results)
1 medium onion, chopped
3 medium-large carrots, sliced into 1/4 - 1/2 in pieces (or use a small bag of baby carrots - like the ones you pick up in a baggie, and take home, and snack on right out of the bag)
2 garlic cloves, chopped
Oregano, to taste
Black Pepper, to taste
Mrs. Dash, to taste (optional, and also use only Garlic & Herb, Onion & Herb, Orignal Blend or Table Blend)
Cook up the onion, carrots, garlic and Kielbasa in the bottom of a soup pot (big pot, like the ones you use to make spaghetti), with a little Olive Oil Spray (or just cooking spray) until the onions are nearly translucent (roughly 5 mins. on med-high heat). Add in the Chicken Broth, drained and rinsed beans, and cover cooking about 15 mins. Once it comes to a boil, scoop out about 2 cups of the mixture, and place in a blender or food processor. (It will be hot, so be very careful. Hot food pureed in a blender or food processor will expand, and can escape easily if you are not careful. I typically place it in a blender, put the top on, use a dish towel to cover my hand, and hold the top down as I pulse the blender until it is pureed.) Once you have a puree, pour it back into the pot, cover and cook about 5 mins. Then add the spinach, stir together, and serve.
It is also easy on the wallet because once made, meals average about $2 per meal for a couple, and about $1 for a single person. If you are making this for a family with children, it is also very nice on the wallet. So, enjoy! It is tasty, hearty, nice on the wallet, and also healthy! :)

Ramen, mac & cheese, pasta, rices, beans, boil potatoes for mashed potatoes, blanching veggies, making soups and stocks.
And it's not just boiling water. You can make cheese sauce, alfredo sauce, eggs, anything with an electric stove. We use ours every day. I can't imagine not having one.
(However, I hate this gas stove. Bless you for wanting an electric stove. I loved my old one!)

grits. instead of an electric stove, what abt hot plate (they make a double one ) or a propane camp stove. Then you at least could something other than boil water.

pasta,dried beans,oatmeal,hot dogs,frozen ravioli's,mac and cheese from a box,small canned ham boiled with a few potato's or chopped cabbage(the later stinks but taste great so light a scented candle)
