Don't text her, Call instead. She'll be more flattered that you have the direct interest in her by dialing her number and wanting to hear her voice. Don't hide behind the phone. Call and start off by hello and tell her that you had a really great time and would like to know if she would like to go out sometime. She gave you her number for a reason and i'm guessing that it's to be more then just text message friends.

say the same thing you would as if you were talking to her on the phone.

you could be humorous. "Hey________, remember me the guy from Cardiff?"
Or normal.
"Hey what's up? It's _________"
You could even add, "Do you ever use msn?"
