My friend and I had half of a bottle of wine with dinner last night, but chose to not drink the rest. I put the cork back in the bottle and placed the bottle in the refrigerator. I need to know if this will cause the taste of the wine to deteriorate and how quickly I should finish the bottle off.

Also a little more on that question, I put a bottle of red wine in the freezer to cool down quickly and ended up forgetting about it. Is this wine ruined?

Most of your answers are spot on, however if you inadvertantly forget to drink the rest within the time frames suggested, it will still be ok to freeze in cup/ or1/2 cup quantities for cooking purposes. Pour it into a plastic bag, knot the bag and lay flat in the freezer.

I think it might depend in some ways on what kind of wine it is.

I do know of people who save a particular bottle of wine for use years later (like a couple has a small glass of wine from the bottle they had at their wedding reception on their anniversaries).

Since, technically, wine improves over time, I would imagine it would last a lot longer than most other open drinks or anything like that. You may want to finish the bottle off over the coarse of a few months, but it's not like if you put a leftover bottle of milk in the fridge and have to finish it in days/weeks.

You were wise to recork it and put it in the refrigerator. That will provide some protection to the wine; if you had poured it into a smaller bottle, so that the wine came up to the neck of the smaller bottle and therefore was exposed to less air (or you had used one of the air extraction pumps), that would have provided even greater protection. My "rule of thumb" is no more than three days open before the wine starts smelling a bit like port.

Unopened: 3 years from vintage date; 20 to 100 years for fine wines
Opened: 1 week refrigerated and corked

If its a red wine-its best consumed right away or within a 24 hour period and should not be refrigerated. Ifs a a white bottle within a 72 hour period-bottle should be placed on its side in the frig. Enjoy!

Personally, I would finish a white within a couple of days to a week. To me a red would start to deteriorate after tonight unless you remove the air from the bottle. There is tool you can buy that will suck the air out and recork the bottle. $10.00 + If you do this it will last a week or so.

I don't usually want to drink it after 2 days. I can have 1/2 the bottle one evening, and the other 1/2 the next, but after that it goes flat and loses it's yummy taste all I taste is the alcohol then.

Red wines you should let "rest" 5 minutes or so before pouring.White wines,it doesn't matter.
